Foods have been the object of attention and research of anthropologists. Through observing, describing,and then analyzing, interpreting a particular ethnic group’s food system (including food acquisition, production, production, consumption, etc.), they associate the food system with the ecological system, cognitive systems. And they concern the food system in the larger context of economic, political, ethical, moral and other aspects of connections and relationships. The vast majority of anthropologists put foods as their central issues, or important issues attached with the central issues.In this paper, I put Lanzhou beef noodles,which both have a very local characteristics and a very ethnicity characteristics,as my research topic,and concerning the culture dissemination of this food. This article divided the culture of Lanzhou beef noodles’ spreading in China into two stages. The first stage focused on how the Lanzhou Lanzhou beef noodles were generated in this special natural ecological environment and religious cultural environment, and became deeply loved halal staple. The second stage focused on how the Lanzhou beef noodles were taken to the other parts of China, and became popular in the country’s fast-food specialties.The culture dissemination of Lanzhou beef noodles were affected by many dynamic factors natural ecological aspects, human religion aspects, political and economic aspects, etc., in different stages of their transmission, different power factor dominates. In the first stage, natural ecological aspects, human religion aspects occupied the dominant position, in the follow, political and economic aspects joined in. In the second stage, the the influence of natural ecological aspects is very little, while the influence of human religion, political and economic is still strong.
