With the frequent inter-culture communication, the globalization has been accelerated since 21 st century. The communication between Chinese and western culture becomes closer and closer. As the popularity of food shows on TV, it is obviously to see that the dietary culture has been on an important position in the process of cultural exchange between China and western countries. Dietary culture has always been one of the most important parts of national culture. However, since the factors like different living environment, habits, customs and different sense of value, it is much more difficult on the translation of dietary culture. No matter on the names of dishes, recipe, or the cultural customs behind it, there are no specific standards on translating. There are still arguments between translatability and untranslatability of dietary culture.The traditional translation puts emphasis on language analysis and text comparison. However, translation is not only the shift between languages, but also the communication and transplantation between different cultures. In 1970 s, research of translation turned to explore cultural field, represented by Susan Bassnett and Andre Lefevere, who brought ―cultural turn‖ to translation research, emphasizing the impact of culture on translation.The text material of the thesis is selected from the Chapter four of ―Nanchang Diet‖, which is translated by the author herself under the guide of Lefevere‘s rewriting theory. By combining the rewriting theory put forward by Andre Lefevere, this thesis mainly discuss how to deal with C-E dietary cultural translation. It focuses on the problems that produced during translation dietary text and finds out proper translation strategies. According to Andre Lefevere, translation is influenced by the environment in which the translator is. In this environment, ideology, poetics and patronage are the factors that influence to a great degree. This thesis will explore the translation of dietary culture through these three aspects, illustrated by case studies.This thesis provides a new perspective to the research of dietary cultural translation through the study of rewriting theory of Andre Lefevere. Not only does this thesis provide practical translation strategies of dish names, but also provides solutions to the translation of raw materials and the idioms related to the dietary culture. Meanwhile, it makes an effort to spread the local dietary culture.
