Rice protein is a kind of high quality plant protein, the study of rice protein, because of eating habits problem, more Asian countries in this field of research.Domestic research mainly focuses on simple physical and chemical properties and extraction technology, its advanced functionality, physiological regulation and control mechanism only reported in the study of Yang ling, etc.The existing research results show that the rice protein has good fall sterol, cholesterol-lowering effect, can activate the Nrf2 pathway, regulating GSH metabolism and antioxidant effect.Purpose of this study is to further confirm the connection between the rice protein and antioxidants, clear under the condition of all kinds of dietary, casein, antioxidant effect of rice protein.Oxidative stress is closely related to DNA damage, but the rice protein research there are few reports related to DNA damage. Therefore, in this study, we focus on and discuss different dietary conditions, different ages, rice protein and DNA damage, thus further understanding of the effect of rice protein.Under the condition of no cholesterol and fat diet, experimental Wistar rat itself DNA damage probability is low. Both growth and maturation of mouse DNA damage were not significant. But compared with casein group of experimental results, the existence of the rice protein or to a certain extent reduced the mice liver DNA damage probability, has played a protective role.Under the condition of rich in dietary cholesterol, mice liv er DNA damage increased markedly, mouse DNA damage rate is higher than in mature stage. The rice protein dietary conditions significantly reduces the rate of DNA damage, DNA damage has played a very good protection effect.Under the rich in fat diet, mice liver DNA damage probability also has rise, compared with casein group, rice protein also significantly reduced the rate of DNA damage. The rice protein can effectively reduce the mature rat liver malondialdehyde, oxidation products such as protein carbonyl content, increase total antioxidant capacity, and dietary cholesterol effect of rice protein.Rice protein can thereby reducing the occurrence of DNA damage by oxidative stress. The experimental results show that, under the condition of all kinds of dietary, rice protein can effectively promote growth or mature Wistar rat oxidation resistance, reducing oxidative stress, reduce the occurrence of DNA damage.
