Cordyceps is a rare traditional Chinese medicine and advanced tonic, it is of great medicinal value. After a series of studies, the cordycepin contains good immunity, antivirus, inhibiting tumor and so on. The cultivation of cordyceps in our country already has a good development, but the application is mainly in the form of mycelium and fruit body. Therefore studying the best extraction technology, the development of products such as the infusion of Chinese caterpillar fungus and cordyceps wine will have important economic value and broad market potential applications.This research contents:to explore the performance of modified microwave oven so as to set the parameters when it is under different conditions,to compare the extraction yield of the microwave extraction method and ultrasonic extraction method to determine the best extracting cordycepin; research the process of the infusion of Chinese caterpillar fungus and cordyceps wine.The results showed that:1. Distilled water as the solvent in microwave extraction, by single factor experiment, the suitable conditions is as follows:material liquid ratio is 1:20, power is 500 w, microwave heating time is 15 min, and temperature is 65 ℃. By orthogonal experiments, to determine the optimum process conditions of microwave extraction of cordycepin is as follows:the material liquid ratio is 1:25, poweris 500 w, microwave heating time is 12 min and temperature is 65 ℃.2. Distilled water is the solvent, under the same material liquid ratio, power and time, the extraction yield of microwave extraction and ultrasonic extraction are the same. But achieving the temperature of 65 ℃, the ultrasonic wave needs heat 4 h, so achieving the same extraction yield, microwave extraction is more energy than the ultrasonic wave extraction.3. With the increasing of extraction time, microwave extraction yield were significant reduction, but ultrasonic extraction yield increase gradually.4. By single factor experiment to determine the appropriate conditions,the infusion of Chinese caterpillar fungus production is as follows:cordyceps powder is 3 g, porous starch is 2 g,xanthan gum is 0.3 g and dextrin is 0.5 g.Orthogonal experiments determines the optimal production technology of Chinese caterpillar fungus medicine is as follows: cordyceps powder is 3 g, porous starch is 2 g, dextrin isl g and xanthan gum is 0.15 g.5. The production of cordyceps wine is as follows:based on liquor, per 10 mL of base liquor to joins caterpillar fungus coarse powder 0.5 g, under the condition of 65 ℃,300 W by microwave treatment, the total acid number follows down, the total ester grows up and the alcohol decreases. The wine becomes soft, transparent and the spicy reduces.
