Liquor (alcohol) is an important carrier of social communication in China. However, excessive alcohol-drinking will cause health damage. An concept of "drunken degree" had been proposed by Zeng Zuxun timely to guide the produce of liquor with low drunken degree. L-theanine is an functional amino acid benifical for nerve cells and lver cells, and is easily soluble in water and liquor. It has a practical significance by adding L-theanine in liquor to achieve the effect of reducing drunken degree and alleviating liver injury by alcohol.The present study included the following three parts:(1)Preparation of low drunken degree liquor by adding L-theanine and evaluation of reducing drunken degree; (2) Effects of low drunken degree liquor on biochemical indexes in mice which get alcohol liver injury; (3) Effects of Low drunken liquor on liver histopathology in mice.The experiments of intragastric gavage to mice with 38° standard ethanol solution,38° liquor,38° liquor with 5 g/L of L-theanine group, 65° standard ethanol solution,65° liquor,65° liquor with 5 g/L of L-theanine group,65° liquor with 8 g/Lof L-theanine were conducted.The results showed that the drunken degree of liquor samples with L-theanine were less than their original liquor, and the confirmatory tests show that the optimal concentration of L-theanine in 38° liquor and 65° liquor were 5 g/mL and 8 g/mL respectively. In summary, L-theanine has a significant effect on reducing drunken degree of liquor.Acute and chronic alcoholic liver damage modeling were made to detect the activites of L-theanine against liver damage.The results show that original liquor gavage cause increases of ALT, AST and TG in serum significantly, however, low drunken degree liquor with L-theanine could inhibit the increases of ALT, AST and TG in serum. Alcohol stimulation could lead to the increase of MDA, and the reduce of GSH and SOD activity in liver tissue, while Low drunken degree liquor with L-theanine effectively lower the alcohol stimulation. These results indicate that L-theanine can relieve alcoholic liver injury.Histopathologial observation were conducted by animal experiments. The mice were divided randomly into six groups:control group,38° liquor group,38° liquor with 5 g/L of L-theanine group,65° liquor group, 65° liquor with 5 g/L of L-theanine group,65° liquor with 8 g/L of L-theanine group. After the treatments of 4 weeks, the situation of steatosis was observed by HE staining. The results showed that alcohol stimulation arouse severe steatosis in liver tissue and caused the formation ofbig fat particles in mice. However, the steatosis of low drunken degree liquor with L-theanine groups were significantly better than original liquor groups.
