The experiment was conducted to study the effects of replacement of maize grains with different ratio of cassava residue(CR) on growth performance,slaughter performance,carcass quality,meat quality,meat tenderness,antioxidant abilities and serum biochemical indices of beef cattle,which provides the theoretical foundation for the application of cassava residue in cattle production.Forty healthy crossbred Simmental beef cattle with similar weight of(634±29.40) kg were randomly allocated into 4 treatments that were arranged as complete randomized design.Beef cattle in control group were fed basal diet,in experimental goups,CR replaced 15%,30% and 45% maize grains of basal diet respectively.10 days of adaptation and 70 days of data collection.The effect of replacement of maize grains with different ratio of CR on growth performance showed that:the group of 15% CR could reduce the finally weight of beef cattle(P<0.05),and significantly reduce the ADG and DMI(P<0.01).The group of 15% and 30% CR had no significant difference on finally weight and ADG compared with that of control,while 30% CR group could reduced the DMI of beef cattle significantly(P<0.01).The effect of replacement of maize grains with different ratio of CR on slaughter performance of beef cattle showed that:15% CR group had no effect on slaughter performance and carcass quality(P>0.05),the increasing of CR ratio could reduce the carcass weight(P<0.01),net meat percentage(P<0.05),meat-bone ratio(P<0.05),sirloin weight(P<0.05), back fat thickness(P<0.05), ether extract content(P<0.05) and meat tenderness(P<0.05),while the live weight at slaughter,dressing percentage and marbling degree had a trend to be decreased(P>0.05).The effect of replacement of maize grains with different ratio of CR on serum biochemical index of beef cattle showed that:replacement of maize grains with CR had no influence on T-AOC,T-SOD,GSH and MDA that in serum of beef cattle(P>0.05).The TP content of 45% CR group was lower than the others(P<0.01);the ALB content that in control was higher than that in 15%,30% and 45% CR group.To sum up,higher ratio of CR could reduce the DMI and ADG of beef cattle,and could also produce harmful effect on slaughter performance and carcass quality. Under the condition of this study,the 15% CR ratio for replacement of maize grains in the diets could reduce the cost of feeding and no adverse effects on beef cattle.
