Floral honey is composed mainly of the carbohydrates, fructose and glucose, which is brewed through nectar, secretion and honeydew from plants with secretion from honeybees. Apart from sugars, honey also has a wide range of minor constituents. Rape is the most main crop in spring in Hubei province, and rape honey is one of the most important nectar in our country. Pursuing economic interests, some test methods (GB/T 18932.1-2002 & GB/T 18932.2-2002) of national standard has failed in the honey adulteration. So it makes great sense to do some research on solving problems of honey adulteration. Therefore, the aim of the present work was to collect some rape honey from some locations in Hubei Province at different time, extract secondary metabolites from them with appropriate method, and research the fingerprint by HPLC to explore some mutual specific profile as floral markers for these honeys, and find some method to solve problems of honey adulteration. Further study, the structure of these specific profile are also analysed. The conclusion of this thesis as follows:1. It’s a feasible method to extract with organic solvent. We can get a good HPLC map to extract with acetone, dry and redissolve with methanol; to use the mobile phase consisted of a mixture of water and formic acid and methanol with gradient elution and record the chromatograms at wavelengths of 340nm. The extract obtained is not flavonoid or low flavonoid content.2. The samples of Rape honeys from some main producing areas in Hubei Province were used HPLC fingerprint technology to analyse some specific profile after simple former processing. There were 5 collective peaks detected, the retention time is 33min、37min、42min、45min、63min, respectively. Comprared with Robinia honeys and Chaste tree twigs honey produced in Hubei Province, we can confirmed that the 5 collective peaks were the fingerprint of Rape honeys produced in Hubei Province.3. We can obtained that it is a feasible method to control the quality by the fingerprint of honeys.4. To know the molecular weight of those 5 unknown chromatographic peaks, LC/MS had be used to determine. The molecular weight is 444.3m/z (about 33min)、294.1m/z (about 37min)、412.3m/z (about 42min)、244.1m/z (about 45min)、578m/z (about 63min)。...
