Hemp is a kind of great plant resource, it provides a huge number of hempseeds and hemp-leaf for the humankind, which has huge developmental potentials in food and medicine industry. Denatured defatted hemp meal is a kind of by-products of hempseeds that have been pressed for oil in high temperature. This meal is a kind of great vegetable protein source, but it is mostly used as animal feed in the industry and is not utilized efficiently, which caused a great loss of protein resource. There are several poly-phenols that are enriched in physiological functions in hemp leaf, especially cannabidiol(CBD). In recent years, CBD exhibits huge potentials in anticancer, epliepsy and Alzheimer’s disease, thus extracting CBD from hemp leaf is of practical significances.This thesis aimed to utilize combined technologies of continuous wet-grinding,jet-cooking and ultra-filter to prepare hemp protein that had great functionalities and high CBD contents using denatured defatted hemp meal; this thesis also aimed to utilize three extraction methods of enzyme-assisted solvent, sub-critical and super-critical technologies to prepare extractum that wad enriched in CBD using hemp-leaf, and utilize anti-solvent method to prepare microsphere particles that had CBD using this extractum. This thesis is of great application values in utilizing hemp by-products, the main results were showed as followed:(1) Studies on hemp protein prepared by membrane method that had good functionalities:High quality hemp protein that was enriched in CBD was prepared by combined technologies of continuous wet-grinding, jet-cooking and ultra-filter using denatured defatted hemp meal;Compared with protein prepared by traditional method, protein prepared by membrane method not only played a role in nutrition and health, but also showed better color, solubility,water holding capacity, oil holding capacity, foaming capacity and other functionalities; This protein was enriched in CBD that mostly existed as combined state, its CBD contents(164.84μg/g) was significantly higher than that of conrolling protein(131.86 μg/g).(2) Studies on extractum prepared by enzyme-assisted solvent, sub-critical and super-critical extraction method that was enriched in CBD: Hemp leaf were under the treatments of heating, Viscozyme L and acid-protease, the CBD content of the extractum was56.11 mg/g, which was improved by 35.77 mg/g when compared with that of those extractum prepared without any treatments; The entrainer contents of sub-critical and super-critical extraction were 40% and 35%, respectively, the CBD contents of the extractum were 25.02mg/g and 56.36 mg/g, respectively.(3) Studies on microsphere particles were prepared by anti-solvent method that contained CBD: Microsphere particles were prepared by anti-solvent method using extractum as core materials and sodium caseinate(Na Cas), OSA-modified starch(OSA-S) and saponin(Quillaja)as stabilizers, which had good stabilities and contained CBD; The particle sizes were 150.93 nm, 566.63 nm and 547.50 nm, respectively, and the embedding rates were 47.2%, 19.5% and56.2%, respectively when the contents of Na Cas, OSA-S, Quillaja were 1.0%, 1.67% and1.33%, respectively, and the extractum content was 0.10 g.
