In recent years, Cerasus Humilis in China has wide distribution, and the production has increased year by year, but related products has not a great variety, relatively. The Cerasua Humilis juice is the main product, and its by-products has no research. In this paper, dietary fiber was prepared with Cerasus Humilis pomace which was the by-product of Cerasus Humilis juice. The difference of physicochemical property and molecular structure between extruded and unextruded Cerasus Humilis pomace was analysised. Then using the extruded Cerasus Humilis pomace as raw material to product dietary fiber tablet and designing the best optimal parameter.The main content as follows:(1) The Cerasus Humilis pomace was modified by the twin-screw extrusion technology,and analysised the effect of the content of soluble dietary of four factors, which was moisture content, particle size, extrusion temperature and screw speed. Then the best modification process was optimized with the orthogonal experiment, the optimal parameters as follows: the moisture content was 40%, the particle size was 80 mesh, the extrusion temperature was 140℃and the screw speed was 160r/min. The degree of influence of four factors on the content of soluble dietary fiber was moisture content > extrusion temperature > particle size > screw speed.(2)The physicochemical properties was analysised which includes water holding capacity,swelling capacity, water combining capacity, cholesterol absorpting capacity, nitrite absorpting capacity, glucose absorpting capacity and cation exchange capacity. The results show that the hydration properties, absorptivity and cation exchange capacity had different degree of improvement.(3)The influence of extrusion process on the modified Cerasus Humilis pomace dietary fiber was determined. The microstructure of dietary fiber was observed by scanning electron microscopy. Modified dietary fiber has loose structure the rough texture, and the surface of the existence of amount of tiny holes. While, the surface texture of unmodified dietary fiber was relatively smooth. The infrared spectrum analysis showed that, the C=O bond,-OH bond and other typical absorption peaks were contained, and the modified dietary fiber had α-form,β-form glucosidic bond and the pyran ring structure. X ray diffraction result showed that the modified and unmodified dietary fiber both hace crastac texture, and the main peak station had no significant change, but the diffraction peak intensity of modified dietary fiber had increase.(4)With extruded Cerasus Humilis dietary fiber as material to product dietary fiber tablet.The optimal formula was determined by the single factor test and orthogonal test and the evaluation index for this test was comprehensive evaluation. The result show that the addition amount of magnesium stearate, microcrystalline cellulose, lignin, xylitol:citric acid,croscarmellose sodium is 0.4%, 15%, 20%, 2%, respectively. Undering the optimal condition,the tablet had delicate refreshed taste, moderate sweetness and acidities and the surface has no cracks.
