Potato residue is the waste residue in potato starch processing. The potato residue contains a lot of dietary fiber.In the work reported here, potato residue was modified by cellulose and twin-screw extrusion technology respectively, some physicochemical properties of modified dietary fiber were analyzed.In this paper, the main tesearch results were as followed:First, on the basis of single factor experiment, orthogonal experiment results indicated that optimized conditions were 1:12 of water content, pH5,40℃,20U/g of cellulase and reaction time of 2 hours. Under such conditions to repeat validation SDF yield in potato residue was up to 30.28%.The content of SDF in potato dry residue has increased from 7.01% to 15.7%.Second, on the basis of single factor experiment, response suface methodology results indicated that optimized conditions were 0.175mm of potato dietary fiber size,128% of material moisture,163℃ and screw rotation speed of 320r/min. Under such conditions to repeat validation SDF yield in potato residue was up to 34.83%.The content of SDF in potato dry residue was 19.13%.Third, in the water-holding ability, swelling ability, water binding capacity, oil-holding ability and cation exchange ability.the dietary fiber modified by cellualse had the greatest effect.
