In this experiment, the indexes of physical and chemical indicators,fatty acids,Sn-2fatty acids and triacylglycerides were analysised in 62 varieties of camellia seed oil;then the differences among them were compared systematically; at the same time the fingerprints of fatty acids and triacylglycerides were established as well as the adulteration model in order to set up a certain standard for the quality control of camellia seed oil.The results were as follow:(1) The contents of fatty acids in Camellia oil were analyzed by GC using methyl pentadecanoate as the internal standard,results showed that there were five kinds of fatty acids in camellia seed oil which included palmitic acid,stearic acid,oleic acid, linoleic aicd and linolenic acid. The fatty acids were different in varieties of camellia oil; the content of palmitic acid and linoleic aicd decreased with the rise of latitude in camellia oil that come from different place;The average content of fatty acids in 62 varieties of camellia seed oil samples were Common Camellia oil less than Oils from Camellia spp.;depending on the content of fatty acid,the Camellia oils were classified into high,medium,low level of oleic acids and unsaturated fatty acids by the method of cluster analysiswhich which can provided a theoretical basis for the breeding of Camellia. At the same time, the fatty acid fingerprints of camellia oil were established which were stable and reliable because the similarities among the samples were no less than 0.996.(2) This was the fist study systematically about fatty acid in Sn-2 among different varieties of camellia oil in domestic.the results showed that the fat acids in Sn-2 is mainly about palmitic acid, stearic acid,oleic acid,linoleic acid and linolenic acid.The Content of fatty acids in different camellia oils were different significantly,so as to the ordinary camellia oils which come from different areas,but the changes were not regular with the latitude;it was different about the content of fatty acid in Sn-2 in different oils of Camellia spp. Significantly,the oleic acid and unsaturated fatty acid were highest in the oil of Camellia brevistyla; fatty acids in Sn-2 position were mainly about unsaturated fatty acid,ranging from 61.12% to 93.88%,and the average content was 78.05%,which indicated that the unsaturated fatty acid in camellia oils was easily digested. There was mutual restraintion in saturated fatty acids and unsaturated fatty acids,oleic acid and the other unsaturated fatty acids;depending on the content of fatty acid in Sn-2,the Camellia oils were classified into high,medium, low level of unsaturated fatty acids by the method of cluster analysis.(3) The triglycerides in camellia oils were mainly about OOO+SLO and OOP, the content of them were 79.363% and 11.628%;Camellia oil include six carbon equivalent number of triglycerides,the content of ECN48 (91.120%) were the highest, The triglycerides were different in varieties of camellia oil,which were influenced by genetic factors and growth conditions.The content of OOL+SLL and SOO in ordinary Camellia were less than Camellia spp.,however the content of ECN44 and ECN48 were on the contrary.The Camellia oils were classified into high,medium, low level of OOO+SLO by the method of cluster analysis;At the same time,the triglycerides fingerprints of camellia oil were established which were stable and reliable because the similarities among the samples are no less than 0.982.(4) Principal component analysis showed thatrthe adulteration concentration is above 20% can be identified completely When the camellia oil adulterated with mechanized palm oil,sunflower oil,rice bran oil;the adulteration concentration is above 15% can be identified completely When the camellia oil adulterate with soybean oil,peanut oil and cottonseed oil;the pure camellia oil was distinguished clearly with the adulteration concentration of 20%,40%,60%,80%.Discriminant analysis shows that:pure tea oil can be distinguished with the accuracy of 96.20%; the type of adulteration oil can be determined accurately when the concentration of rice bran oil, sunflower oil is above or equal to 15%;as well as the concentration of palm oil, soybean oil and peanut oil were above or equal to 20%.
