In this research, the color of beer and its quantitative methods were studied, so the beer color quantitative methods has important significance of the beer quality assessment and beer production. This research used beer corresponding red, yellow, blue three color agents quality to quantify the beer color.Determination the Tartrazine, Sofranin T, Evans Blue three-color agents for the three primary colors, and the maximum absorption wavelength of their aqueous solution were determined by spectrophotometry was 430 nm, 510 nm, 600 nm. The average mass ratio was 1:0.4:0.25 of a variety of beer samples. The quality ratio of 1:0.4:0.25 was prepared by the standard color solution of beer characteristic color, its can better simulate the chroma of beer. The standard solution of the quality concentration of 0.092 g/L was obtained, which equivalent to 100 EBC beer chroma unit, its can be used as a new standard of evaluating beer chroma.Research of BRY method of Deviate Color Degree c said beer color tone relative to standard solution of skewness, c > 0, it said that slanted red, and c < 0, it said that slanted green(blue); the bigger of the c, the higher degree of slanting red, the smaller of the c,the greater degree of slanting green. CIELAB method and BRY method to determine the lightness and saturation, then each of the lightness, saturation of correlation analysis, it was significantly associated with the two methods, namely BRY system of lightness and saturation equation was effective. Research shows that the lightness of pale beers are bigger than the lightness of dark beers; and the color saturation of dark beers are bigger than the saturation of pale beers.Total phenolics mainly affects yellow tone of the beer, has a slight effect on red component, has no effect on blue. The total phenolics smaller or not obvious effects on black beer color. Total phenolics with lightness and saturation correlation analysis showed that the total phenolics also effects on the lightness and saturation. During the fermentation, the color of beers kept basically balance, and the fermentation temperaturehad slight influence on the color of beer. The material also affected the color of beer.Generally speaking, the main color of the beer from the material and the formation of Saccharification stage, and in fermentation stage beer color changed very small.Nonlinear fitting analysis of the volume ratio of Schooner malt and wort and coke wort with slantd angle, chroma, saturation, lightness of fermented liquid by origin 8.0;and nonlinear fitting analysis slantd angle with chroma of fermented liquid by origin 8.0.Get the fitting formula to guide the beer dark production.This research set up the beer color quantitative method is simple, and has the advantages of operation and effectiveness.
