Objective:In this study, we used low-field NMR techniques for rapid detection of adulteration camel milk of different regions; and to explore the feasibility of this technique in camel milk adulterated applications.Methods:The camel milk of Alxa and Xinjiang Bactrian camel were selected and used as experimental materials in this syudy. Pure camel milk samples, pasteurized camel milk, HTST camel milk samples and different forms of adulterated camel milk samples were analyzed by the LF-NMR machine. Camel milk samples adulterated with cow milk, sheep milk, soybean milk, urea and water were tested and obtained the testing data. Then we used the principal component analysis (PCA) method to process and analyze the echo peak point data by detected CPMG sequences.Results:1. The detection limit of Xinjiang pure and pasteurized milk adulterated with cow milk was 10%-20%; while Xinjiang HTST camel milk adulterated with 10% cow milk can be completely detected. The detection limit of Alxa pasteurized milk adulterated with cow milk was 20%; while Alxa pure and HTST camel milk adulterated with 10% cow milk can be detected.2. The testing results of the pure, pasteurized and HTST of Xinjiang and Alxa camel milk adulterated with sheep milk was basically the same with the the testing results of adulterated with cow milk, and the mixed ratio reached 10% can be fully detected.3. The detection limit of Xinjiang and Alxa pure camel milk adulterated with soybean milk was 10%~20%.4. The detection limit of Xinjiang and Alxa pure camel milk adulterated with urea was 4%.5. The detection limit of Xinjiang pure camel milk adulterated with water was 4%-6%; while the detection limit of Alxa pure camel milk adulterated with water was 2%-4%; Xinjiang and Alxa pure and pasteurized camel milk adulterated with 4% cow milk can be detected.Conclusion:The low-field NMR techniques combined with principal component analysis can not only recognize the pure camel milk but also camel milk adulteration, while also had the good identification results for the adulterated camel milk of different regions and different processing conditions. In addition, there was a good distinction effects in different adulterated samples (cow milk, sheep milk, soybean milk, urea and water) and different adulterated ratio. The testing data of different adulterated ratio of different adulterated samples showed a certain regularity in the PCA score charts.
