Jellyfish is mainly large jellyfish of traditional fishery production in Asia, it is a kind of food and also is regarded as a medicine, and it is loved by many people. Because fresh jellyfish is easy to autolysis, jellyfish is processed by curing jellyfish with salt and aluminum after fishing. But curing process brings the problem of high aluminum residual in jellyfish. Therefore, in this paper, the desalination process of salted jellyfish, the aluminum speciation in jellyfish, the method to reduce aluminum residual, and the risk assessing of aluminum in jellyfish were studied.1. Study on the desalination process of salted jellyfishSalted jellyfish need desalination for further processing, in this section the effect of Solid-liquid ratio, desalination conditions and desalination time on desalination of salted jellyfish using water were studied. To determine the optimization process of jellyfish desalination. The concentration of aluminum in desalination jellyfish was examined using graphite furnace atomic absorption spectrometer. The results showed, the optimization conditions were concluded as follows:solid-liquid ratio 1:20, desalted 40 min then replace soaking continue with 60 min desalination; the content of aluminum in salted jellyfish was 158.77 mg/kg and 146.86 mg/kg in soaking jellyfish. Thus soaking the jellyfish in water could hardly affect the content of aluminum in jellyfish.2. Study on the method of reducing the concentration of aluminum in jellyfishIn order to make jellyfish a kind of security food, this section salted jellyfish was soaked in acetic acid, citric acid, and EDTA, ultrasonic-assisted desalination was also carried out on soaking jellyfish, swelling degree, solids content and the amino acid composition of desalted jellyfish was also measured to study the method of reducing the concentration of aluminum in jellyfish. The results showed:soaking in EDTA, ultrasonic-assisted desalination could not be reduced the content of aluminum in jellyfish; the aluminum residues can be reduced to 29.86μg/kg by soaking in 0.05% acetic acid, the content of aluminum was reduced 80.08%. Swelling degrees chang a little and the nutrients was kept.3. Study on the various chemical species of aluminum in jellyfish and the content of aluminum in artificial gastric juiceThe content of aluminum did not reduce to the standard. Thus study the bioavailability of aluminum in jellyfish is important. In this section the various chemical species of aluminum in jellyfish was extracted by sequential fractionation, jellyfish was digested in vitro using artificial gastric juice, the content of leading aluminum and aluminum obtained by using artificial gastric juice were determined by inductively coupled plasma mass spectrometry. The experiment included the distribution of aluminum in jellyfish is insoluble aluminum> organic aluminum> inorganic aluminum> water-soluble aluminum; only 3.50% aluminum obtained by simulated gastric fluid. It calculated that only little aluminum in jellyfish could be absorbed, aluminum in jellyfish is not harmful to body.4. Effect of jellyfish on aluminum residue in mice body by fed 30 daysIn order to study the metabolism and accumulation of aluminum in jellyfish in vivo, the healthy mice was used as model. At the end of treatment the mice were sacrificed to get blood and visceral. The content of aluminum, magnesium, iron, copper, lead, arsenic and mercury were determined. The results showed compared with the control group, the level of aluminum in liver were increased. The content of aluminum in blood, kidney and brain were decreased compared with control group (P < 0.01, P< 0.05). The content of mercury in blood, kidney and brain were reduced in dose group. The measurement results for other elements in mice showed that fed jellyfish did not affect the content of these elements. This result is significant to change our understanding of the risk of residual aluminum in jellyfish, further research in the metabolize of desalination jellyfish in vivo, particularly the mechanism of transpiration of aluminum.5. Risk assessment of residual aluminum in jellyfish By measuring the content of aluminum in jellyfish, analysis on form of aluminum, combined with animal experiments and risk assessment techniques, study the edible safety of jellyfish. The results showed the risk of residual aluminum in jellyfish can be controlled without taking into account.
