Objective:The experiment conducted to investigate muscle quality, serum biochemical indices and expression of fatty acid synthase (FAS) and lipoprotein lipase (LPL) of Schizothorax prenanti Tchang at different weight, and provide the basic data for being artifical rearing and improving the quality of Schizothorax prenanti Tchang.Methods:The weighing of 137.8±1.7g (small),312.4±11.8g (medium),500.9±31.4g (large) were enrolled, respectively, the body length and high, condition factor, hepatopancreas somatic indices (HSI), mesenteric lipid index; the basic components of the back and abdominal muscles, pH, dehydration rate, amino acid, fatty acid, the hardness of muscle, springness, abhesiveness, gumminess, cohesiveness, resilience, chewiness; TC of serum, TG, HDL-C, LDL-C, VLDL-C were determined, and LPL and FAS mRNA level in liver and muscle were evaluated by real-time PCR in Schizothorax prenanti Tchang juvenile, subadult and adult growth periods.Results:1. In terms of figure and visceral index, the results showed that:the condition factor, hepatopancreas somatic indices and mesenteric lipid index were the highest in the small group, the second place was medium group (P<0.05), and the large group was lasted, but mesenteric lipid index was significantly reduced (P< 0.01). The body length and high was the highest in the medium group, the large group was second place (P>0.05), the small group was the lowest (P< 0.05).2. In terms of muscle quality, the results showed that:compared with the small group, the moisture was successively reduced in the medium group and large group (P<0.05). The crude protein and crude ash had no significant change in muscle. The crude lipid was the highest in medium group (P<0.05), and the turn were small group, large group.The moisture of hepatopancreas was lower in the medium and large groups (P>0.05). The crude lipid of hepatopancreas was increased in the medium group and then reseased in the large group (P<0.05). The hardness of muscle was the highest in the large group (P< 0.05), the small group was second palce and medium group was the lowest (P> 0.05). The abhesiveness and resilience were highest in the medium group, the small group was second palce and the large group was the lasted. Springness, cohesiveness. gumminess and chewiness were highest in the medium group, the turn were large group and small group.3. In terms of serum biochemical index, compared with small group, there had no significantly chang with TC, TG LDL-C, HDL-C and VLDL-C in the other group.4. The LPL mRNA and FAS mRNA expression in liver of Schizothorax prenanti Tchang were significantly higher than that in muscle (P<0.05). The expression of muscle FAS mRNA and liver LPL mRNA were the highest in the medium group, the small was second pake and the large group was the lowest (P<0.05). The expression level of liver FAS mRNA was the highest in the medium group (P<0.05), the turn were small group and large group. The expression of muscle LPL mRNA was the highest in the medium group (P< 0.05), the large group was second palce and the small group was lasted (P< 0.05).Conclusion:The body length and high was increased, the condition factor, hepatopancreas somatic indices and mesenteric lipid index were decreased, the crude lipid of muscle was increased and then reduce, the hardness was improved, the TC, TG, LDL-C were increased and the reduced, the expression of liver and muscle FAS and LPL mRNA significantly increased and then decreased and the content of intramusclar fat was found to correlate with the expression of FAS mRNA.
