Coix seed(Coix lacryma-jobi L. var. Meyuan(Romen.) Stapf) with a variety of pharm acological activities is a Chinese traditional medicine and edible resources,Coix seed can b e anti-cancer, anti-tumor, anti inflammation, improve immunity, inhibit trypsin activity, also hav e the effect of hairdressing,So it had been a hot research. In this paper,in order to make f ull use of Coix seed resources,Coix seed in Guizhou Xingyi as raw material was researche d and developed to be deep processing products,including drinks coix seed beverage and cos metic products of Coix seed mask, and carries on the appraisal to the development of produc ts. The main contents and results were as follows:1. Development of Coix seed beverage:(1)production processThrough single factor and orthogonal experiment, response surface, the blending process of Coix seed dosage and beverage galactenzyme solution process,stabilizer were optimized to g et the best formula,production and technological conditions for the production of Coix see d beverage. Coix seed’s baking conditions was180℃,30min;adding 3 times water immersion.6 times water pulping; enzymatic hydrolysis conditions was 0.0017% α- amylase, enzymoly sis tempertature of 60℃,hydrolysis time 10min; inactivating the enzyme10 min at 100 ℃;2500r/min centrifugal 10 min. Followed by 0.03%CMC-Na, 0.03% pectin, 0.09% xanthan gu m as compound stabilizers, adding white sugar 3%, honey 0.75%, essence 0.14%, β-cyclodext rin 0.6% deployment, 100℃ sterilization 20 min.Coix seed beverage had unique taste, rich nu trition, quality and stability.(2)nutritional indexThe main nutritional index of coix seed beverage products: the protein content was 0.03mg/100 g,the content of polysaccharides was 35.625mg/Lm L;the content of Coix seed oil wa s 13.19mg/m L; the soluble solids content is 8.5%; the beverage system placed 45℃ for 15 days didn’t produced hierarchical and precipitation,which has goodstabilization effect.Evaluation of the antioxidant capacity of Coix seed beverage:1m L beverage for DPPH free radical scavenging capacity equivalent to the 0.15 mg of ascorbic acid, O2- removal rate was28.6%, Coix seed beverage had the antioxidative effects.(3)Microbial indicatorsMicrobial indicators of Coix seed beverage was: the total number of colonies 82cfu/m L,coliform bacteria 1MPN/100 m L,which met the national health standard of beverage.2. Development of Coix seed mask(1)production processThrough single factor and orthogonal test, the Coix seed mask formula was optimized,th e optimal formula of mask was:Coix seed oil 10%, CMC-Na/ 2.5% gelatin polyacrylamid e 1%, glycerol 4%, sorbitol 2%, the right amount of essence and preservative, deionized wa ter was added to 100%.The mask in this formula had a certain moisturizing whitening activi ty,even texture and pleasant aroma.(2)Physicochemical indexThrough the determination, viscosityof coix seed mask was 10750 m Pa?s, p H was 7.04,moderate viscosity, easily to apply and no stimulation; In RH62% and RH85%, the moistur e rate respectively were in about 24% and 25% during 24 h,which had some moisturizing eff ect; Tyrosinase inhibition rate was 30.6%, there was a certain active whitening;Heat resistanc e, cold resistance and centrifugal stability was good; making skin moisture rate rose 3.4% wit hin 30 min,which had good moisturizing.
