BTEC instruction mode, rarely known by people, has not been widely used in hospitalitycourse in Hotel Management major in Chinese secondary vocational school. In terms ofinstruction mode, assessment method and evaluation system, traditional hospitality course stilluses written examination to test learners in practical operation, which is short of practical contentand inefficient in operation. Through research, to apply BTEC instruction mode to hospitalitycourse of Hotel Management major, improve the methods of assessment and evaluation and holdstudent-oriented class can promote hospitality instruction to some extent.This thesis analyzes the characteristic, implementation step, evaluation system, researchstatus and problem of BTEC instruction, and combines related study of learner situation and thecharacteristic of hospitality course to propose BTEC instruction mode of hospitality course inHotel Management of secondary vocational school. In addition, empirical research is carried outin aspects of design of teaching object, course content, teaching process, course assessment andinnovation and analysis on BTEC instruction mode and it comes to the conclusion that theapplication of BTEC instruction mode provides hospitality course teachers who are full of passionin reform in vocation school with an excellent stage. They can leverage their wisdom and gropewith ideology of non-fixed method to explore a new way for reforming hospitality course insecondary vocational school. Each hospitality course is a new “product” and practice ofinnovative thinking. Teacher can acquire enlightenment from learners so thatteaching benefits teachers as well. BTEC instrument is a process of “interest creating, intereststimulating, interest inducing and interest expanding”. Interest can make learner have learninginitiative,and the effect of study can be visible as new problem arises continually, which makeslearner go on researching till to succeed.BTEC instruction improves learners’ enthusiasm and subjective initiative sufficiently inlearning hospitality. It materializes the empty content and visualizes the abstract theory. Learnerswidely believed that BTEC instruction is more acceptable while its simplified operation in themajor of Hotel Management has higher promotional value as well.The characteristic and innovative point of this thesis is application of empirical of BTEC instruction mode in Hotel Management major in secondary vocational school and new innovativedesign which aims at teaching objective, content, teaching process and course assessment. It alsoraises new enlightenment and suggestion to Chinese course reforming of vocational hospitalityeducation.
