Foie gras is a fatty liver which has a large amount of fat deposition in the liver of5-10times heavier than the normal liver. When the goose grow up, forced feeding with highenergy feed in a short period of time, formed Foie gras via biochemical reactions.Normally, Foie gras could reach350-1400g,the maximum could reach1800g. Foie grascontains a large amount of unsaturated fatty acid, lecithin, triglycerides, deoxyribonucleicacid, enzymes, vitamins and other nutrients, which is delicious food on the table andconsidered as health food tonic in many countries.France, Hungary and Israel are the biggest countries of Foie gras production. Thereannual production accounts over90%of the world’s total output. In recent years, Foie grasindustry gradually moved to the east area in the world, with the consumption of Foie grasshowed an upward trend in USA, Japan and Southeast Asia, and Foie gras industry rapidlygrew up in China. The domestic Foie gras enterprises located in Jilin,Shandong, Anhui,Guangxi and Yunnan, accounted50%of national production. After2001,from south tonorth in Anhui province, specialized farms and cooperatives of farmers have developedgradually in Luan, Chaohu, Bozhou, Suzhou and other places. The amount of Foie grasincreased yearly, and Anhui province has become one of the largest base of Foie grasproduction nationwide.The author has investigated and analyzed the present situation of Foie gras industry inAnhui Province. The existing problems are as follows.(1) Breeding lags behind thecommercial production. Landaise is the main breed to produce Foie gras in our province.On the one hand, it was used for feeding to produce Foie gras directly. On the other hand,it was used as a parental line in crossing with local goose breeds. In China, there were fewspecialized breeding for Foie gras.(2) The reproduction ability of goose breeders waslower and seasonal, which caused the seasonal production of Foie gras.(3) Lack of feedingstandard and management regulations.(4) Processing of Foie gras was lag seriously.According to the problems above, integrating the experiments and productionexperience of Zhongan Livestock and Poultry Co. Ltd, suggestions were put forward asfollowing.(1) Regulated the reproduction system of Landaise, and strengthen the breedingability of Foie gras goose varieties. On the one hand, to regulate the reproduction system ofLandaise, on the other hand, to breed goose varieties (lines) of Foie gras based on theimported and domestic goose breeds to improve the performance and disease resistance, and to establish reproduction system to provide commercial strains for Foie grasproduction.(2) Promoted off-season breeding technology to adjust the goose laying seasonby artificial measures. Via the technology, the off-season breeders lay55.3eggs,15.4morethan the normal breeder.(3) Carry out studies on relative technologies. The present studiesshowed that, the body weight decreasement of30-35%in off-laying period by controlfeeding benefit the reproductive performance; adding1.0-1.5%plant oil into the feedingdiet obtain higher live weight and lower feed-liver conversion in commercial goose.(4)Pay more attention to the disease control and the waste disposal and reuse.(5) Developingnew products by further processing to extend the industrial chain.
