ObjectivesBy investigating and analyzing food safety knowledge, attitude, practice of college students and evaluating their nutrition conditions, the article aims at exploring causes and influencing factors of food security accidents in schools, and thus putting forward some prevention suggestions and improving strategies.MethodsSelf-made investigation questionnaire, which covers knowledge levels and awareness of food security, dieting habits, consume behaviors and foodborne infections, was applied to conduct on-the-spot investigation. Study samples were selected by multiple layers(medical or non-medical). Questionnaires were distributed by well-trained investigators and completed on the spot. Data collected were input by two people and analyzed with SPSS17.0.Results1. Overall situation of food safety knowledge, attitude, and practice, KAPThere is no difference in food safety knowledge mastering among different majors who has a low awareness over it in general. Meanwhile,85.57%students are willing to learn and accept more food safety knowledge.85%students hold the attitude that current status quo of China’s food security is not optimistic.61.83%are worried about the safety of school canteen and believe that it is the school that is responsible for food security accidents.52.74%students get their necessities in campus shops, and there is less chance(8.01%) to go shopping in big supermarket downtown. Prices and production dates are their main focus while shopping. The questionnaire mainly focuses on students, and the problems revealed are serious and worrying. Their knowledge of food security is insufficient and one-sided, and influenced by sex, age and the location.2. Nutritional condition of college studentsAll the sample students are examined on regular peripheral blood and body mass index (BMI). The results show that there is a parallel relationship on red blood cell amount and hemoglobin levels. Anemia rate is higher in girls than in boys, and there is a significant difference among the two (P<0.05).It is common that BMI of most sample students are below the average level, girls are even worse. Abnormal rate among boys and girls are statistically significant (P<0.05)3. Factors influencing food securityFirstly, most college students in our city are from countryside, and they have less access to food security knowledge.Secondly, they have limited ability to obtain related knowledge, together with limited publicity of school and other institutes.Thirdly, it is age and educational level that matters more.Last, it is improper consume practice resulted from less developed economy.ConclusionInadequate food security knowledge among college students is resulted from less access to related information, limited knowledge obtaining ability, and insufficient publicity of the school and other institutes. Health condition of college students is worrying and there is a higher rate of anemia. The sanitation condition and qualifications of the staff of school canteens and nearby dinner needs to be improved.In conclusion, we put forward the following suggestions:First, publicity of food security should be increased so that citizens will have a good knowledge of it. Second, monitoring regulations of school canteens should be bettered, qualifications of the staff should be examined, and each should take their responsibility. Third, more lectures and courses related to food security should be provided by the college. Fourth, food safety monitoring should be strengthened, source of the food should be stressed and cared, qualifications and credibility of the supply units should also be evaluated. Last, investment on school canteens should be increased with coordination between departments, expanding scale while strictly operating according to regulations and rules.
