| Red kermel pigment has special physiological functions, is used as a natural pigment widely. The topic is the research of extraction, purification, stability and composition of anthocyanins of red kermel pigment, for the future of red kermel pigment products research and production development to provide a scientific basis.This paper was studied on used resin to purify red kermel color. The results showed that HPD-80was suited to use on red kermel color. HPD-80had the better adsorped effect when the absorb-ency of red kermel color was about2.466, the adsorption current velocity was2BV/h.Meanwhile HPD-80had the best desorption effect when the concentration of ethanol was70%,desorption current velocity was1BV/h. Red kermel color was greatly refined by resin, the purity of pigment was261.1.Red kermel pigment is water-soluble pigment and is very sensitive to pH, the structure of pigment could change in alkaline conditions, it is the red color in pH1.0-3.0; The heat and light could effect red kermel pigment, we should avoid heat and light when using it; H2O2and Na2SO3could cause the degradation of pigment to a certain extent,so we could not use them at the same time;sodium benzoate and potassium sorbate had not damage obviously to pigment, so we could use them at the same time at suitable concentration.After preliminary analysis, red kermel pigment was likely to contain cycanidin and peonidin mainly. and two kinds of anthocyanins per the total86.06%, respectively, and9.44%, there are both glycosidic bond on three’s place. Cyanidin-3-bit’s glycosidic bond may glucosidase. Experimental results and literature analysis that the main components of red kermel pigment were cyanidin-3-glucoside and peonidin-3-R. |
