| From the perspective of micro ecology the thesis is to find out the effects of Eurotium cristatum including Eurotium cristatum (G1), Eurotium cristatum (G2), Eurotium cristatum (G3), Eurotium cristatum (G4) on chemical components of Jinhua tea flower powder matrix. And its effects on the quality of Jinhua loose tea have also been stated, which provides a microorganism resource for the product of Jinhua loose tea and tea cream and also offers a theory basis of different categories of Eurotium cristatum.After inoculated of3,7,11days, comparison the chemical index changes of EGCG, caffeine, theanine, tea polyphenol, soluble sugar, water extract, fluorine content in the golden flower loose tea, respectively. And sensory assessment of its color, flavor and quality, at last we get the following conclusion:1.After inoculation to the heimao dark tea, different types of Eurotium cristatum have great impact on the content of main chemical composition of Golden Flower Loose Tea’s matrix. Four different types of Eurotium cristatum have significant influence on the heimao dark tea’s EGCG, tea polyphenols, theanine, and the soluble sugar content et al, which presents a certain regularity. Especially on the golden flower loose tea substrate where the gallic catechin gallic acid ester (EGCG) and the influence of the content of tea polyphenols have stronger regularity.The treatment of inoculating different types of Eurotium cristatum has influence on the content of heimao dark tea’s EGCG, and the content basically represents trend:G2treatment> G1treatment> G3treatment> G4treatment, and there is significant differernce among G1treatment, G2treatment, G3treatment, G4treatment. The treatment of inoculating different types of Eurotium cristatum has influence on the content of heimao dark tea’s tea polyphenols, and the content basically represents trend:G2treatment> Gl treatment> G4treatment> G3treatment, but there is insignificant differernce among G1treatment, G2treatment, G3treatment, G4treatment. Scattered sac fungi of different types of Eurotium cristatum process in hair flower after3d,7d,11d of the golden flower loose tea matrix of theanine content in environment, the overall trends are:G2treatment> G1treatment> G3treatment> G4treatment, and there is some significant difference among different treatments after11days. Different types of Eurotium cristatum inoculation treatment on golden flower loose tea environment just some differences of the soluble sugar content in the matrix for3d,7d after treatment, G4treatment> G3treatment> G1treatment> G2treatment; after11d, G3treatment> G1treatment> G4treatment> G2treatment, but it does not exist significant differences among Gl treatment, G2treatment, G3treatment, G4treatment. And different types of coronoid process powder capsule bacteria of golden flowers scattered tea caffeine, fluorine, it can extract content in matrix measures such as the effect is not big, and no regularity.2.Different types of Eurotium cristatum inoculation to the heimao dark tea’s main chemical composition content impact is mainly on the3d-7d. Different types of Eurotium cristatum inoculation to the heimao dark tea’s gold flower loose tea and cream have no obvious difference between in color, aroma and flavor quality,but the quality has greatly improved in color, aroma and flavor. Relative to the black color, orange, yellow, and a slight clouding, aroma is bland, sterile flowers, an indication the heavier; of golden flowers scattered tea soup color is red, clear bright, fragrance is full-bodied, pure bacteria has a unique black tea aroma and fragrance, taste glycol, back to the sense of sweet, not bitter. Among them, the "G2" processing of golden flower tea was slightly better than other treatments. Comprehensive multi-factor study shows that:Eurotium cristatum (G2) inoculation to the golden flower loose tea have higher effective function composition than other treatment, quality has a better performance, suitable for promotion. |
