Finally,the paper have an in-depth understanding of the defects in risk of Putiancity risk assessment system and put forward some related suggestionsestablish perfect risk assessment system.The results of study mainly referred in this paper as follows:1. The introduction of the risk assessment system and risk analysissystem.At present, with concerning about food safety, the risk analysis asthe main means of food safety management has gradually receivedextensive attention of people, the main consists of risk assessment, riskmanagement and risk communication. Full accord the three organic parts,influence each other, as the foundation of risk assessment, riskmanagement is a means to end through risk communication to achieve agoal.The risk assessment is an important composition of risk analysis,and the risk assessment was executed from scientific prediction. risk management and risk communication is to select the optimal riskmanagement measures of scientific information with other factors such aseconomic, social, cultural and ethical,and integrating and balancingthem.2. The risk assessment of Putian ‘s vegetable pesticide residuesRisk assessment process can be divided into four different stages:hazard identification, hazard description, exposure assessment and riskcharacterization. This article analyse the vegetables pesticide for hazardidentification and description of each towns at first,then we exert anexperiment and caculate the Food safety Index of FSI (Index of Foodsecurity) of each town.3.
