The fatty acid composition in different tissues and expressions of gene related with fat deposition in muscle of Fl hybrid doe kids of Boer Goats♂×Guanzhong dairy goats♀at age of4-5-month-old were analysed in this study in order to explore the effects of ovariectomy on the meat quality of doe kids.1.38similar body weight F1hybrid doe kids of Boer Goats♂×Guanzhong dairy goats♀at age of4-5-month-old were randomly divided into treatment and control group.The treatment group were ovariectomized at the beginning of the test, but the control group were not done.The two groups were kept under the same condition of stall-feeding during the whole test.Ten kids were chosen randomly from the two groups to slaughter after2months of the test. The about50g sample were collected respectively from longissimus muscle, leg muscle and perirenal fat to determine the fatty acid composition.The results were as follows:(1)The saturated fatty acid (SFA) level in the longissimus muscle of treatment was40.045%, which was significantly lower than that of control group (P<0.01), thereinto,the thirteen carbonate (C13:0) and fifteen carbonic acid (C15:0) levels were lower than that of control group (P<0.05), there was no difference on other saturated fatty acid levels between treatment and control group(P>0.05).The monounsaturated fatty acid (MUFA) content of treatment was46.472%, which was significantly higher than that of control group (P<0.01).Between them, the oleic acid (C18:1) level was significantly higher than that of control group (P<0.01).The polyunsaturated fatty acids (PUFA) level of treatment was11.506%, which was lower than that of control group (P<0.05),in which the eicosa-dienoic acid (C20:2) and eicosatrienoic acid (C20:3) content was lower,and there were no differences on other polyunsaturated fatty acids between groups (P>0.05)(2)The SFA content in leg muscle of treatment group was38.182%,and it was significantly lower than that of control group(P<0.01).Between them,the caproic acid (C6:0), decanoic acid (C10:0) and lauric acid (C12:0)leveis were lower than that of control group, the contents of palmitic acid (C16:0),stearic acid(C18:0),el even carbonate (C11:0),thirteen carbonate (C13:0),fifteen carbonic acid (C15:0),arachidic acid (C20:0) etc.were lower than that of control group (P<0.05or P<0.01).The MUFA content in leg muscle of treatment group was42.694%, which was the highest in two groups.and it was significantly higher than control group (P<0.01).The oleic acid (C18:1) and palmitic acid (C16:1)level were significantly higher than that of control group (P<0.01).Among the PUFA, alpha-linolenic acid (ALA,C18:3(ω-3)) and eicosatrienoic acid(C20:3were slightly more than that of control group,others were lower,for example, the linoleic acid (C18:2) content were only64.92%of control group respectively.(3)Compared with skeletal muscle,all of SFA contents of two groups in perirenal fat were higher,and that of treatment group was relatively lower and that of control group was the highest.The contents of fifteen carbonic acid (C15:0) was significantly lower than that of control group(P<0.05).The MUFA content in perirenal fat of treatment group was27.152%,which was higher than that of control group,but there was no significantly difference (P>0.05).In which,the oleic acid (C18:1) level was higher than the control group (P<0.05).The PUFA content of treatment group was higher than control group,but there was no any significantly difference between groups (P>0.05)Thus it can be seen, the SFA content of longissimus muscle, leg muscle and perirenal fat of doe kids could been decreased and the MUFA content could been increased by ovariectomy.The PUFA content of longissimus muscle, leg muscle could been decreased by ovariectomy,the tenderness, flavor and health function of the meat could been also improved.2.About10g longissimus muscle,leg muscle and perirenal fat were collectted respectively to extract the RNA,and mRNA expressiones of the genes of lipoprotein lipase (LPL),acetyl Co A carboxylase (ACC), fatty acid synthase (FAS) and hormone sensitive lipase (HSL) in above three tissue were detected by the Real-time PCR.The results showed:(1)The mRNA expression of LPL in the leg muscle of treatment group was significantly higher than that of control group(P<0.01),but there was no difference on longissimus muscle and perirenal fat between treatment group and control group (P>0.05)(2)The mRNA expression of ACC gene in longissimus muscle, leg muscle and perirenal fat of treatment group were significantly higher than that of control group(P<0.01).(3)The mRNA expression of FAS gene in the longissimus muscle and perirenal fat of treatment group were significantly higher than that control group (P<0.01).The gene expression in leg muscle of group was more than that of control group (P<0.05)(4)The mRNA expressions of HSL in longissimus muscle,leg muscle and perirenal fat of treatment group were significantly lower than that of control group (P<0.01). By all accounts,the mRNA expressions of LPL,ACC and FAS gene in longissimus muscle,leg muscle and perirenal fat could been increased by ovariectomy,meanwhile,the mRNA expression of HSL gene could been decreased.
