| As beer market competition is increasingly fierce in China, products produced bythe domestic beer company have been unable to meet the demand of consumption ofthe consumers. In order to meet the market demand, the introduction of foreigndifferent types of beer and the development of new varieties of beer is imminent. IPAbeer,as a foreign special beer, is more successful and popular in consumers, whichhas a rich flavor of beer hops compared with the domestic bottom fermentation beer.As the IPA type of beer has never appeared in the Chinese beer market, therefore, theproduction is very important for the domestic beer consumers.IPA beer in this study was a characteristic production, which is based on theprogresses of optimizing the saccharification and fermentation of Ale beer. Types ofIPA beer production processes optimized by the method of this study were as follows.Malt and water in the ratio of1:4were poured into the mash tun at56℃andmaintained for30min,and the temperature was increased to65℃for1hour, then thetemperature was increased to72℃for10minutes, finally, when the temperature wasto78℃, saccharification was terminated; the temperature of sparging water wasmaintained at78-82℃; The time of wort boiling was set to70minutes,25%of thetotal bitter hops were added to the mash tun at10minutes after the boiling, then50%of the total bitter hops were added to the mash tun40minutes after the boiling, finallyadding25%the aroma hops of the total to the mash kettle10minutes before theboiling ending; boiled wort was in the whirlpool for30minutes at85℃, then thecooled wort was pumped into the fermentation tank;2.5%IPA beer yeast was addedinto the fermentation;120g-180g Gansu No.1hops were poured into the100Lfermentation tank at20℃. The temperature in primary fermentation was maintained at22℃.When the residual extract was down to4°P, the primary fermentation wasterminated.,brewing was completed after wine storage.Compared with other domestic beer types, IPA type of beer produced accordingto method in the study after beer analysis and expert evaluation, was proved tohave the following obvious characteristics: rich hops aroma, mellow taste, rich andwhite bubbles. The rich hops aroma and the distinctive taste, will make IPA beer isvery popular in china. |
