In recent years, all kinds of food safety problems occurred frequently all over theworld, which caused widespread public concern. The food safety accidents caused thepanic for food safety of consumers, and restrain public demand of relative food in thelong run, which brought about uncounted loss for food industry. The panic mainlygenerated by the risk perception of food safety. An efficient way of intervene andguide the public food safety risk perception is that communicate with consumersusing scientific and effective food safety information. For one thing, the food safetyawareness of public could be enhanced. For another, the public panic generated byexaggerating the food safety risk could be reduced. But now our food safetyinformation release system is still in its infancy, and has lots of parts to be perfected.When relative parties release information, they can hardly hold consumers’ riskperception and information needs, and can’t judge the risk perception and expectbehavior of public influenced by information release, which would lead to blindnessof decision-making.The main methods which have been used are literature analysis and empiricalanalysis. In the preliminary studies, at first, the paper refers to a great number ofresearch results of food safety risk perception and food safety information at homeand abroad. And then, it compare several food safety information release system ofdomestic and foreign used the method of comparative research, in order to point outthe insufficient of our food safety information release system. On that basis, designedand distributed questionnaires, gained the information of consumers’ risk perceptionand information need of food safety, and put forward suggestions for food safetyinformation release of each period.This thesis introduced time factor in empirical research, analyzed public riskperception and information need of normal condition and the preliminary period,rectification period and termination period of significant food safety accidentsrespectively, in order to discover the characteristic of each stage, it should be theinnovative point of the article.The thesis aimed to help relevant parties to master the risk perception andexpected behavior of public, so as to avoid the blindness of decision. In this way,national food safety information release system can be improved on the one hand, onthe other hand, it provide reference and recommendation for government andmanufacturer releasing information and directing public opinion.
