Vinegar has a higher edible value and medicinal value, it plays an increasinglyimportant role in people’s daily lives, so its quality inspection is particularly important.Although these common methodsfor vinegar quality inspection can accurately extractthe information, but the analysis processes of them are more complex, long life cycleand high cost, and without real-time detection.Using electronic nose to detect vinegar can just to make up for the shortcomingsof traditional detection methods, which is easy to operate, and can achieve real-timedetection in situ.The electronic nose system is generally composed of the four kinds of functionaldevices which are detecting objects, the array of sensors, signal conditioning circuits,data pre-processing and pattern recognition.An electronic nose is designed, which contains a MQ-3-type gas sensor, fiveTGS series gas sensors and a collection circuit with the LPC2138microprocessor asthe core.The collected data is uploaded to a computerthrough the USB, real-timedisplayed by using host computer LabView software, and analyzed using principalcomponent analysis (PCA) and linear discriminant analysis (LDA). The designedelectronic nose has been used to measure five kinds of vinegar, and the correlationbetweenvinegar types and their ingredients were analyzed.Resultsshow that theelectronicnose technology can distinguishdifferent kinds ofvinegar. It suggests that the electronic nose technology has a potentialprospect invinegar quality pre-evaluation.The new-type electronic nose technologymakes a reliable guarantee for detectingthe quality of edible vinegar, has a broad application prospects.Finally, on the electronic nose late period of pattern recognition algorithms, thedata processing method is proposed that making the principal component analysis andBP neural network combined, and provides a basis for the development of theelectronic nose which is applicable to other detection object. The system is proved having good stability and practicality through actual testing,and laies a foundation for further design convenient and accurate identification of theelectronic nose.
