An important feature of the food quality is the flavor of food; it is a very important factorfor people to choose food. Grade and value of food is largely determined by the flavor. Atpresent, instrumental analysis and sensory analysis is the main method to detect the quality ofthe food. Instrument analysis in the measurement process is complicated, high cost. Humanfactors will influence on sensory analysis. Application of electronic nose technology in flavorfields of food is more widely, but the electronic for nose commercial use has not yet appeared.This paper use virtual technology established a electronic nose detection system for foodflavor. This article has done the research from the following aspects.(1)This paper established an electronic nose system for food flavor. The electronic nosesensor array is optimized for food flavor, and a combination of several sampling methods, anew type of reactor design. Several sampling methods were compared, and a new reactionchamber.was designed.(2)A strong transplantation algorithm was designed. The sensor as a variable has beenelected which has a distinct role for classification and identification method by stepwisediscriminant analysis.(3)Reliability of electronic nose system for classification and identification was validatedby two different foods. The overall recognition rate algorithms were calculated, and theevaluation of the electronic nose model algorithm was introduced.The recognition rate of the electronic nose for food flavor system can meet the basicneeds of the experiment. Evaluation of the pattern recognition algorithm and optimization ofthe sensor array can lay the foundation for the commercialization of electronic nose.
