In this paper, the composition of pigments of blood-flesh peach Tianxianhong during fruit development by the control of white-flesh peach Jinhuadabaitao andyellow-flesh peach Jinxiang was determined. Then study the changes of pigmentscontent and phenylalanine ammonialyase(PAL) activity, analyse the difference andcorrelation of their changes.To study polyphenols in the skin and flesh of the threecultivars and compare phenolic acid contents of different periods. These studies applymaterial basis for further study of the antioxidant activity of blood-flesh peach.The main pigment in mature period of the three cultivar in skin and flesh wascyandin-3-glucoside by HPLC.The results indicated that the chlorophyll contents andthe carotenoid contents decreased straight on during fruit development in both skinand flesh of the blood-flesh peach. Anthocyanin appeared during mature period, andthe contents of anthocyanin increased gradually in both skin and flesh. Themaximumvalue of anthocyanin in the flesh and skin of blood-flesh peach were27.8mg/100g FW and48.73mg/100g FW respectively. The PAL activity in peachskin and flesh fluctuated and decreased a little druing fruit development. Correlationanalysis showed that anthocyanin content were remarkably negatively correlated withchlorophyll content in blood-flesh peach. There was a remarkably positiverelationship between anthocyanin content and PAL activity in the flesh of“Tianxianhong” in mature period. We conclude that the decrease of chlorophyllcontent leads to the increase of anthocyanin, PAL is the key enzyme which precipitatethe synthesis of anthocyanin in blood-flesh peach.The main phenolic acids in the three cultivars determined by the HPLC methodwere chlorogenic acid and neochlorogenic acid. The highest content of chlorogenicacid was in the flesh and skin of blood-flesh peach of it s mature period.The highestcontent in the skin and flesh were184.354mg/kg·Fw、59.952mg/kg·Fw respectively.The highest content of neochlorogenic acid were in the skin and flesh of white-fleshpeach of it s initial growth.The highest content in the skin and flesh was20.540mg/kg·Fw and42.442mg/kg·Fw, repectively.There were about15kinds of polyphenols in the three cultivars by HPLC method.We determined the three highest of them,they were chlorogenic acid,neochlorogenicacid and cyanidin-3-glucoside.And the other kinds of polyphenols need further study.
