This experiment selected381sheep including four breeds of goat(Laiwu Black Goat,Wendeng Dairy Goat, Boer Goat, Lubo Goat) and four breeds of sheep(Small Tail HanSheep, AoHan, Dorset, Suffolk)randomly in Shandong province. Items include bloodphysiological and biochemical data and concentration of fatty acid,, which calssified bybreed, age and source and analyzed by SAS9.2. The aim of this experiment was try to findout the relationship between flavor of lamb and nutritional value and contents of fatty acid,and also the physiological and biochemical values.1. The comprison of hematology traits between different breeds (goat and sheep).The results showed that total number of WBC,LYM,RBC,RDW-SD, RDW-CV of sheepwere higher than the same items of goat significantly (P<0.01). But the other items such asMID, GRAN,MCH, MCHC were significantly lower than goat (P<0.01). The index of AST,ALB, GLU, BUN, UA, Ca, P, CHOL, TG, LDL-C, CK, LDH, and IgG of sheep were verysignificantly higher than goat (P<0.01). TP, AL, PHDL-C, Mg of goat were very significantlylower than sheep (P<0.01). content of C18:0, C18:2(n-6), C18:3(n-6) and C20:4(n-6) of goatwere higher than sheep greatly(P<0.01),compared with sheep the content of C18:1,C20:5(n-3), C22:5and the value of n-6/n-3of goat were higher (P<0.05), however, the C20:0of sheep was higher than goat (P<0.05).2. The comprisom of hematology traits between the different sources of goat and sheep(Local species and introduced species).WBC, LYM, MID, GRAN, RBC, GCT, MCV of local species were higher thanintroduced species (P<0.01). ALT, IgG, TP, GLU, and CK of goat and UV, Ca, ALP werehigher (P<0.05or P<0.01). TP, BUN, HDL-C, Mg, TG, LDH of local sheep were lower thanthe introduced species significantly or very significantly (P<0.05or P<0.01).(3)C16:1, C18:1T and C18:3(n-3)in local sheep, and C16:1, C18:3(n-6), C20:4(n-6), C20:5(n-3), C22:5, C22:6(n-3), C24:0, C24:1and C18:1T in local sheep were all lowerthan introduced species significantly or very significantly (P<0.05or P<0.01). But C18:1and the value of n-6/n-3in local sheep were higher than introduced sheep very significantlyand significantly respectively (P<0.01and0.05).3. The compricom of hematology traits between different age of the same species. Theresults are as follows:The level of WBC, LYM, MID the youth higher than the adult in Laiwu Black Goat; theyouth Boer Goat the level of MID higher than the adult; The small Tail Han Sheep, the adultthe level of WBC, LYM, MID, RBC, GCT, MCV, RDW-SD was significantly higher than theyouth (P <0.01). RBC, MCV of the adult sheep in AoHan than the youth. AST, CK, LDH ofLaiwu Black Goat, ALP, HDL-C, BUN of Small Tail Han Sheep,GLU of AoHan,P ofSuffolk,the youth significantly (P>0.05) or very significant (P <0.01) than the adult; TP,LDL-C of the Small Tail Han Sheep and Mg of AoHan,the adult significantly (P <0.05) orvery significant (P<0.01) than the youth. the youth of AoHan, Dorset no significant differenceof the adult; C18:3(n-6) of Boer Goat, C18:0,C18:1T, C24:0of Wendeng Dairy Sheep,C20:4(n-6), C22:5of Small Tail Han Sheep; C18:3(n-3) of Suffolk the youth significantly(P <0.05) or very significant (P <0.01) than the adult; C18:3(n-6) of Laiwu Black Goat,C20:4(n-6)Suffolk the adult significantly (P <0.05) than the youth.4. The comprisom of hematology traits between the different varieties of the same species.The results are as follows:the level of LYM, GRAN WBC, RBC, GCT, MCV in Laiwu Black Goat wassignificantly higher than the other three varieties (P <0.01). The level of LYM, MID, WBC,RBC, GCT, MCV, RDW-SD in AoHan are higher than Dorset and Suffolk Sheep, andsignificant difference; the Small Tail Han Sheep have no significant difference between theAoHan, Dorset and Suffolk sheep (P>0.05). n-6/n-3of goat from high to low Laiwu BlackGoat, LuBo Goat, Boer Goat, Wendeng Dairy Goat; AoHa Merino sheep, Suffolk sheep,Small Tail Han Sheep, Dorset sheep in sheep.
