Rice is one of important crops in the world. The rice quality directly involve in the life quality of normal people. Thus, the rice quality has been paid much attention for a long time. Starch is the most storage material in rice. Amylose is a main composition of the rice starch. It is reported that amylose content is directly assocaited the rice quality. Jianghuai rice region has a rich resource of rice varietes. There are a big diversity on amylose content in rice cultivars of this region. Near infrared spectral analysis technology is rapid, non-damage and pollution-free method to determine amylase content. It has been wildly used in many industries area in resent years. Using different rice cultivars from Jianghuai rice region, we try to research on the association among amylose content, rice RVA profile characteristics and correlation with physical/chemical quality. These studies would provide theoretical and technical supports for the improvement of rice protein quality. The main results were listed as followings:1.Using203rice varieties collected from Jianghuai rice region, amylose content in milled rice was determined by both the near infrared reflectance spectroscopy and a normal chemical method. Several mathematics treatments of the sample spectra and partial least square (PLS) regression were used to establish the calibration model. The model was examined to exhibit a good accuracy and practicality on easurement. The standard error of calibration (SEC), standard error of validation (SEP), correlation coefficient of calibration set (C-set) and validation set (V-set) were1.6582,1.9083,0.9278and0.8736, respectively.2.Using310rice varieties collected from Jianghuai rice region, the rice RVA profile characteristics and physical/chemical qualities were determined and further analyzed. The result revealed a good correlation between RVA profile characteristics and amylase contents. The correlation between RVA profile characteristics and physical-chemical indicators is more significant if the amylose content lower,.There are significant differences in breakdown and setback RVA profile characteristics in rice varieties with a similar AC. Combining with the rice RVA profile characteristics, the physical/chemical quality displays an important significance in the evaluation of rice quality.
