With the economic development and the improvement of the level of people’s lives, the redwine increasingly welcomed by the people. The fermentation process as an important part ofwine production, its control is essential. At present, the fermentation process control technologyhas become increasingly maturity and perfect, and a variety of control systems have beenpractical and application, the red wine industry develop toward the direction of automated andintelligent. This topic conjoin the Internet of Things technology with traditional controltechnology, and design to use the control technology of wireless sensor networks based onInternet of Things technology, it can reduce investment of red wine fermentation production, andcomplete the optimization of fermentation process.This paper designed a red wine fermentation process control technology based on Internetof Things, and achieves to monitoring and control parameters of the fermentation processthrough wireless communication control technology. First, on the basis of the study of red winefermentation process control situation, it analyzed the internet of things technology and the largehysterics, time-varying, nonlinear in fermentation process, researched ZigBee technology,including ZigBee protocol stack structure, physical layer, MAC layer, network layer, applicationlayer, and their protocol service criterion and frame structure, as well as the network form of theZigBee network topology structure. Then analyzed the measurement and control of the mainparameters of the fermentation process, and give the impact of temperature to the fermentationprocess, analysis the theory of the temperature control, and gained a suitable control algorithmbased on this. Then, design of the hardware and software of the fermentation process control,after give the overall structure scheme of the fermentation process control, it specific design ofthe hardware structure of the part of sensor terminal monitor and control module, the ZigBeenetwork transmission subsystem, the host computer monitoring center, include the each modulepart of the circuit design and the chip in the circuit. There into, ZigBee node used the chip ofCC2430, sensor is digital temperature sensor DS18B20, coordinator node connected to the PCwith the serial port. Finally, design the software of the host computer and ZigBee devices. Thedesign of host computer software is based on the software platform about LabWindows/CVIenvironment. The design of ZigBee device software is based on the Z-Stack protocol stack and inIAR Integrated Development Environment, and designed software processes of ZigBeecoordinator node and ZigBee terminal node. Set up a wireless communications network based on the ZigBee protocol, to achieve real-time acquisition of the fermentation process parameters,through the host computer processing to achieve effective control of the production process. Inthe control of fermentation process parameters, it adopt the complex control algorithm whichcombined waiting and usual PID control, it can enhance the control precision and control effect.The fermentation process control based on Internet of Things technology, can get a goodeffect of monitor and control, and it is simple about ZigBee wireless network control structure,so the network communication is flexible and convenient, and easy to maintenance and expand,it can reduce investment and human capital of fermentation production, meet industry needs toimprove the level of control of the fermentation process.
