In the concentrated apple juice export trade, are frequently encountered dueto color values do not meet the contract requirements lead to claim events, givean enterprise to bring very big economic loss. Therefore, to overcome the colorvalue brings about economic loss, has become the fruit juice industry andresearchers continue to try to solve the problem. In recent years, the color valueresearch, researchers focus more attention on the color value of formationmechanism and process control technology, and in the light of the outsidefactors to the storage and transportation of the color value of apple juiceconcentrate and the influence of the color value in the detection and predictionof aspects of the existing problems but little attention. Therefore, to study andsolve this problem has strong urgency and great significance. This research takethe Shaanxi apple juice concentrate exist such problems as the research object,analyzes the influence of the external factors of color, color value monitoring and detecting the existing problems, and study how to eliminate the negativefactors, improve the monitoring level and prediction of color value approach.The main conclusions are as follows:(1) The storage and transportation of environment such factors in thecolor value decline has important implications, raw fruit production areas,storage and transport time (months) and temperature, as well as the differentcolor values of the target setting standards, have a certain impact, in whichtemperature is extremely significant effects, storage time (month) has a verysignificant effect.(2)Shaanxi province concentrated apple juice enterprises mainly adoptsspectrophotometer determination of color value, and international leveldetection of preliminary practice, but due to the detection of professional level isput in bigger difference, many cases can not ensure detection data is true andreliable. In addition, the color values in different storage environment changeprediction has not yet been carried out.(3)Establishing the storage temperature and color value of apple juiceconcentrate linear relationship, and established in5℃and20℃the two typicalstorage and transport of apple juice concentrate representation of temperature,storage time and color value of linear relationship.(4) Directed by using spectrophotometer detection value of the common technical problems, suggestions for improvement are put forward.
