This study optimized the traditional production process of concentrated apple juice on the basis of traditional production process of concentrated apple juice of HS Company,established a complete HACCP system on the implementation and operation of SSOP and GMP by HS Company,and provided a feasible solution by verifying the HACCP system in reverse.The conclusion is as follows:1.By optimizing the production process and its parameters,it adjusted the ratio of pectinase,amylase and cellulose in the enzymatic hydrolysis and increased technological process of resin adsorption,which not only improved the yield of raw materials,but also changed the physical and chemical indexes,such as1.91% increase on light transmittance,33.9% increase on color value,and 67.29% decrease on turbidity.2.By combining the SSOP and GMP implemented and operated by the company with the optimized production process sheet,it conducted hazard analysis for each production line on the HACCP principle,accordingly formulated control measures,determined critical control points,and built a complete HACCP system.HACCP plan determined four critical control points,which were respectively: CCP1 material acceptance-to control the pesticide residue and excessive heavy metals,CCP2 selection-to prevent Patulin,CCP3 pasteurization-prevent pathogenic microorganism,and CCP4 Filtration on the final stage-to control the mixing of metal,rubber fragments and other foreign matter.The CL value corresponding to every critical control point was respectively: CCP1-Certificate of Origin,CCP2-rotted rate after selection ?2.0%,CCP3-thermal death point ?71.1?,time?6s;temperature?85?,time?30s,flow=12000kg/h;CCP4-the mesh shall be integrity of filter screen.Monitoring methods and corrective measures were made for each critical control points.3.By verifying the HACCP system that was put into practice in reverse,it summarized and recorded the various issued during application and proposed feasible solution to each question.
