The test result for lead, cadmium, arsenic pollutants of food enterprises sampled in Changsha region from2010-2012were summarized in this paper, and the test results detection method was also studied during the research. Totally100food manufactories were investigated.2169samples was tested in the past2years. In the1927samples of2010,1.56%of the sample exceeded in Arsenic,4.83%exceeded in cadmium and1.35%exceeded in Lead. In the2167samples of2010,1.75%of the sample exceeded in Arsenic4.29%exceeded in cadmium and1.34%exceeded in Lead. In the2075samples from Jan.2012to Sep2012.1.40%of the sample exceeded in Arsenic3.47%exceeded in cadmium and1.20%exceeded in Lead. The food safety situation is good in general. Meat, aquatic products, grain, processed products and vegetable product take up the big rate of the all polluted foods. Detection methods was established to inspect the seaweed products inorganic arsenic detected with silver salt method, and high-salt foods measured lead by hydride atomic fluorescence spectrometry. The countermeasure was presented for the pollution supervision heavy metal by the research of100food manufactories.
