This paper summarized the use of bisphenol-A, bisphenol-A diglycidyl ether and Novolac glycidyl ether in can material, and gave a presentation of their toxicity and specific migration limit in legislation at home and abroad firstly. Then14BPA-related compounds (BPA、 BFDGE·2H2O、BADGE·2H2O、BADGE·H2O·HCl、BADGE·H2O、 BFDGE·2HCl、BFDGE、BADGE·2HCl、BADGE·HCl、BADGE、3R-NOGE、4R-NOGE、5R-NOGE、6R-NOGE) have been studied by HPLC-FLD and UPLC-MS/MS technology in this thesis. And the migration rule and mathematical models for representative bisphenol-A related compounds migrating from can coating into foodstuff were been investigated.HPLC-FLD method applied Lichrospher C18(4.6×250mm,5μm) column, fluorescence detector excitation wavelength was230nm, emission wavelength was301nm. The validation data showed the linear ranges were10~1000ng/mL, regression coefficients (R2)>0.9993for all analytes, LODs for all analytes ranged from1.65~3.44ng/mL, and LOQs ranged from0.64~4.25ng/mL. UPLC-MS/MS method applied ACQUITYTM (2.1×100mm,1.7μm) column, electrospray ionization, triple quadrupole analyzer, and quantify of the analytes in the Multiple Reaction Monitoring (MRM) mode. The validation data showed the linear range from5-1000ng/mL, excellent linear regression coefficients (R2)>0.9990for all analytes, LODs for all analytes were in the range of0.19~1.27ng/mL, and LOQs were in the range of0.64~4.25ng/mL. In addition, three non-commercially available standards BFDGE·H2O、BFDGE·H2OHCl and BFDGE-HCl were synthesized and be used for qualitative analysis. The ranges of linearity, corrections of linearity and the detection limits of two methods for determinations of14BPA-related compounds have been compared. The results showed that both HPLC-FLD method and UPLC-MS/MS method were sutiable for simultaneous determination of BPA-related compounds, and UPLC-MS/MS method was more sensitive and faster than HPLC-FLD method.The thesis has established the sample extration method in canned foods by a series of different experimentations such as extraction solvent, extraction times and extraction temperature. The method validation data obtained from aqueous-based sample showed the LODs ranged from0.28ng/mL to1.38mL, LOQs ranged from0.92ng/mL to4.55ng/mL, and the average recoveries were in the range of75.6~91.2%for14BPA-related compounds. The method validation data obtained from oil-based sample showed LODs ranged from0.38ng/mL to1.84mL, LOQs ranged from1.06ng/mL to4.46ng/mL, and the average recoveries were in the range of71.1~92.8%for14BPA-related compounds. Both the intra-and inter-day precision RSD<10%. The results showed that this preparation and analysis method was accurate and credible. Finally, this method was applied to the analysis of these compounds in diverse commercial canned samples. The analysis results demonstrated the BPA, BADGE, BFDGE and their chlorinated and hydrolysis derivatives were wildly exist in canned food in Chinese market.The rule of migration of BPA-related compounds from can coating into foodstuff has been investigated using5different canned food samples during18months storing time. And four simulations simulate were used to study the main factor of migration rate (food matrix system, storing time, temperature). It was found that migration levers of BPA-related compounds were arranged in the following order:10%ethanol,3%acetic acid, soybean oil and water, and the temperature and time were important influencing factor of migration rate.According Fick principle and real migraine experiment data, we set up half experience half test mathematical model for migration with assistance from Origin software with user-defined function nonlinear curve fit mode. The multiple correlation coefficients (R2) between0.90~0.97indicated the mathematical models get excellent fitness. This analytical mathematical models can estimate the worst situation of migration.
