Along with the social economy development, people's standard of living rises ceaselessly, meat products with its unique flavor, edible convenience, rich nutrition characteristic, cater to consumer to food quality and taste good, to adapt to the need of modern life. To understand the industry meat consumption and development situation of sales, we use the theory analysis and empirical analysis, the method of combining in wuhan launched at consumers, meat products enterprises and related government management department supervising actuality investigation to the industry, and puts forward the feasibility of sustainable development suggestions and measures for meat, and provide the reference for the new product research and development, sales and quality management.Through the questionnaire and statistics analysis related data that women are the main groups to buy meat. Meat consumption crowd age class analysis shows that, 30 to 40 years old for meat leading consumer groups, proportion of 33%, the second 40-50 years old consumption group 27%. Meat consumption ratio analysis shows that the crowd, professional career staffers, authorities for staff, retirees, private entrepreneurs are meat major consumer groups. Meat consumption is the biggest concern of the crowd for product quality and safety, food additives, meat with 32% respectively by 30% and source of the proportion of the most attention become consumer food safety problems, secondly, taste and brand also become consumer attention of another focus. The survey found 52 percent of the consumers still with fresh meat as the main consumption of meat, ham and with the proportion of clyster of 16%, and western-style occupies the second for 15% proportion. Wuhan consumers of meat market and the product itself satisfaction analysis shows that, 30% of consumers for meat market says is unsatisfactory, 21 percent of consumers said very dissatisfied, 25 percent of consumers said quite satisfied, only 18 percent of consumers said satisfaction; Consumer satisfaction degree of flavor single not more than 35% of starch, without chewing strength not satisfied occupied 33% of product, not fresh 20%, packaging not easy tear to 12 percent.Through the meat industry enterprises and and related government management department supervising actuality investigation showed that sales market scale of Wuhan city meat enlarged, and several large well-known enterprise product quality and the management level is higher, but some of the small enterprise in the personnel quality, production equipment, technology, quality inspection and management level is still large problems exist. Relevant government authorities in regulatory exist on a repeat cross, responsibilities and division of labor is not clear, part of the standard and inspection technology lacking, the problems such as quality supervision, means lag. Aimed at wuhan meat products sales, consumption, product quality and its regulatory existing afore-mentioned problems, it puts forward the suggestions and improvement measures: make products market segments, make marketing more targeted. Establish raw material inspection procurement systems, insist on animal epidemic prevention shall do. Comprehensive strengthening the quality management system, prompting processing process standardization, in strict accordance with"GB2760-2011 Use of food additives standards"and other standards organization production, and resolutely put an end to illegal add non-food material and abuse of food additive. To strengthen the government supervision. Vigorously develop food technology, actively develop the traceability system, promoting technology and application research.
