At present, our country is in the transformation of residents’ food consumption structure. The consumption pattern has changed from only plant food dominated to both animal and plant food. In this paper, the meat consumption structure of rural residents in Inner Mongolia is studied via using the data from previous years, using the methods of structural analysis, comparative analysis, in-depth study of the system of the development. And applying econometric model to analyze the structure of the meat consumption of rural residents in Inner Mongolia, to explore the effect from the income and related prices, through these to provide a theoretical basis for the arrangement of residents diet and the scientific meat consumption choice.With the increase of the income of rural residents, consumption of meat in Inner Mongolia is overall growth trend mainly on pork meat. In the foundation of summarizing the domestic and foreign literature papers, applying the ordinary least squares estimators (OLS) method to explore the income and related prices affected every kind of meat proportion in the structure of the residents. The results show that, the income level changes affect pork consumption structure, the effect level is of the maximum with absolute value, but its value number is negative. The consumption structure of the pork meat proportion has been decreased year by year, moreover, the absolute amount is of most fluctuation. The influence of income and price changes for the beef and mutton consumption structure are mostly obtained, meanwhile their consumption and proportion both increased year by year. Based on these, finally put forward the optimization countermeasures and suggestions in order to upgrade the meat consumption structure of rural residents in Inner Mongolia.
