Pomelo seed oil is the oil of Citrus paradise Macf. seed. Pomelo seeds oil was not effective used although there are huge amounts of resources in our country. Studies have shown that pomelo seed oil contain plenty of unsaturated fatty acid, limonin and other chemicals. It has been regarded as a promisingly nutritious source of plant oil. However, because of its nutritional value, pomelo seed oil is sensitive to environment, unstable and easy-oxidiated, and it tastes bitter.β-CD/pomelo seed oil microcapsule was prepared by saturated aqueous solution method so as to cutting off external environment, promoting stability, covering bitterness, improving its bioavailability, and supporting some reference for developing pomelo seed oil.1. Nutritional value of pomelo seed oil was analyzed, physico-chemical properties were as follows:relative density0.968g/mL, refractive index1.471, peroxide value5.63mmol/kg, acid value1.06mg KOH/g, saponification value196.46mg KOH/g, iodine value97.896g/100g, respectively. Anlysis by GC shown that pomelo seed oil was occupied by66.95%unsaturated fatty acid, such as linoleic acid35.4%(CLAO.58%), oleic acid26.38%, a-linolenic acid3.92%; meanwhile there was33.02%saturated fatty acid, such as palmitic acid29.60%and stearic acid2.86%. Furthermore, pomelo seed oil was analyzed by FT-IR, wave spectrum and data revealed there were10absorption peaks:O-H stretching vitration in3750~3000cm-1, saturated C-H stretching vitration in3000~2800cm-1, carbonyl stretching vitration in1900~1630cm-1, saturated C-H in-plane stretching vitration in1475~1300cm-1, unsaturated C-H out-of-plane stretching vitration in1000~650cm-1. Conclusion was achieved as follows:pomelo seed oil contains unsaturated fatty acid.These features, which served as references of oil identification and nutritional value evaluation, reflect and provide different fatty acid imformation.2. An HPLC method was established to dertermine limonin content in Pomelo seed oil. Chromatographic conditions were as follows:Chromatographic column:Agilent Zorbax Extend-C18(4.6mm×250mm,5μm), mobile phase:acetonitrile-ultrapure water(45:55), flow rate:0.8mL/min, detection wave length:215nm, column temperature:30℃. Linear correlation was good in the rang of48~384μg/mL (R2=0.9997). The average recovery was99.87%, RSD=1.12%(n=3). The limonin content in Citrus Grandis seed oil was327.6μg/g through this method.3. β-CD/pomelo seed oil microcapsule was prepared by saturated aqueous solution method. β-CD/pomelo seed oil, embedding time, embedding temperature affected embedding rate are ranking as follows:embedding time>embedding temperature> β-CD/pomelo seed oil. Response surface methodology was used to optimize processing parameters on the basis of single factor experiments. The optimized processing parameters were β-CD/pomelo seed oil:4.5, embedding time:132min, embedding temperature:47℃, embedding rate reached92.18%under the optimized technology.4. Qualification tests suggested that pomelo seed oil had been embedded successfully and undamaged by β-CD. The microcapsule was nearly spherical, with a small number of little particals under scanning electron microscope. β-CD/pomelo seed oil microcapsule was light yellow power, slightly bitter, very faintest scent of oil, with an average particle diameter of1.58μm. And its water content (3.19%), density (0.452g/cm3), solubility (70.31%), angle of repose(36°), pomelo seed oil-loading rate (74.32%) fully meet the requirements of microcapsule. Weight decrease amout of β-CD/pomelo seed oil microcapsule was less than pomelo seed oil under105℃, meanwhile, shelf life prediction experiment of β-CD/pomelo seed oil microcapsule was182days, more longer than pomelo seed oil (74d), in addition, pomelo seed oil has better thermal stability after embedding.In summary, pomelo seed oil is a good source of nutrients. β-CD/pomelo seed oil microcapsule prepared by saturated aqueous solution method was simple, less demanding on equipment, low cost, and good thermal stability with application and development values.
