According to reports,0.6-0.7 million deers are bred in China, and about 85%-90% of them are sikas. During past years, blood collection technique from deers accelerated the production and utilization of deer blood, and many researches showed that deer blood contains various amino acid, vitamins, lipids, and microelement and can proliferate intestinal bifidobacterium, lactobacillus, enterococcus, and bacteroides, balance blood power, and enhance mice immunocompetence, antifutigue and anti-aging effects.We analyzed 15 quality indexes for three groups of deer blood wines in this article, and the results showed that ginsenoside:110.0mg/L, alcoholicity:35.9%, total acids:1.4g/L, solids content:5.0%, methanol:5×10-5g/mL, fusel oil:6.5×10-4g/mL, Pb<0.10 mg/L, As< 0.10 mg/L, Mn<1.0 mg/L, net content deviation<15 mL/bottle, bacterium colony total large intestine, mold and yeast were all less than 1 cfu/mL, coliform group was less than 3 MPN/100mL, and pathogenic bacteria (salmonella, shigella, staphylococcus aureus, and hemolytic streptococcus) were not detected.Effect of three different dosages (4.6ml/kg.BW/d,9.2ml/kg.BW/d and 18.4ml/kg.BW/d) deer blood wine on antifatigue of mice were further studied, and the results showed a insignificant influence on mice weight between raw material wine medium treatment group and deer blood wine treatment groups, and the latter can significantly prolong burdened swimming times and increase glycogen content, decrease serum urea and lactic acid content in mice blood, which suggest that deer blood wine in different concentrations can enhance antifatigue function of mice.The researches on quality and antifatigue effect of deer blood wine can lay a foundation for the exploitation and development of function food of deer blood.
