Aureobasidium pullulan is a ubiquitous polymorphic fungus isolated commonly from the environment. It produces yeast-like cells, chlamydospores, swollen cells and mycelia in its life cycle. Pullulan andβ-(1,3-1,6)-D-glucans as the exopolysaccharide produced by A.pullulans have being applications in health care, food processing industry, and biomedicine. Many factors such as culture condition and medium components particularly nitrogen (N) source influence the morphological forms, exopolysaccharides(EPS) accumulation of A.pullulans.The changes in morphological forms, EPS accumulation of A.pullulans ATCC 9348 grown in different nitrogen sources media by shake-flask cultures was evaluated in this study. Then the variance of morphological forms, EPS accumulation, and exoenzyme activity of A.pullulans grown on medium containing low-nitrogen (0.13 g·L-1 N) levels, high-nitrogen (0.78 g·L-1 N) levels and melanin by constant stirring tank reactor (CSTR) cultures were evaluated.
