First,we extracted Agkistrodon halys' meat using the buffer saltthen extracted with the PE,the CHCl3-MeOH(2:1) and the MeOH.The part of PE.We were identified 3-cholesterol,hexadecyclic acid,octadecylic acid,9-octadecenic acid by GS-MS; and separate cholesterol from part PE.Using the solid phase and ODS column for the MeOH part.We separated and purified three ingredients.We identified hypoxanthine,uracil and adenosine by 1HNMR and 13CMNR.Used the electrophoresis method and the double Mark method compared the protein of the Agkistrodon halys' head,the skin,the meat.Besides,established water-soluble ingredients pingerprint of the head,the skin,the meat.Three part chemical ingredients were similar,but the content was different,the ingredient in the Agkistrodon halys'meat is the most.A high performance liquid chromatography/electrospray ionization/ mass spectrometry/mass spectrometry(HPLC/ESI/MS2) method has been developed for the qualitative analysis of Agkistrodon halys.The ultraviolet(UV) chromtogram, total ion current chromatogram(TIC) and extracted ion chromatogram(EIC) of the sample and ESI/MS2 spectra of the peaks in the chromatograms were obtained. Uracil,hypoxanthine,inosine and guanosine in the Agkistrodon halys were identified.Has carried on the anti-oxidation experiment to the water-soluble ingredient in Agkistrodon halys'meat,uses the DPPH free radical percentage clearance as the target,proved that water-soluble ingredient in the Agkistrodon halys' meat has a certain oxidation resistance.Has established the complete quality specification of the Agkistrodon halys.
