Gardennia jasminoides Eills is belong to Rubiaceae family ,the dried roots of Gardennia jasminoides Eills are known as Fructus Gardeniae, which was used to cure acute icteric hepatitis, sprain ,contusion and so on.In this thesis, the chemical constituents of the water extract of Fructus Gardeniae were studied. By the type of HPD600 macroporous adsorptive resins, ODS, PHPLC chromatographic method ,6 compound were isolated. On the basis of their physico-chemical properties and spectroscopic analysis, their structures were identified as crocin-1(1), 13-cis-crocin-l(2), crocin-2(3), 6"-p- coumaroyl genipin gentiobioside(4), 3,5-Di-O-Caffeoy-1-H-quinic acid(5), geniposide(6).The quality control method of Fructus Gardeniae was performed by HPLC. An HPLC methode was developed for the determination of crocin-1 and jasminoidin at the same time. The contents of crocin-1 and jasminoidin in the herb and the extracts of the herb weredetermined.To establish method for the determination of constituents in Nutrition Liquid Diet, and thecontents of vitamin C, metal ion, protein and fat were determined with different methods.
