| The restaurants industry is very important to the national economy. The restaurants industry of our country developed dramatically fast with the rapid growth of the national economy and the steady growth of per capita income that the reform and opening brought,but it is still at a comparatively low level compare to it should contributed to the national economy and employment.The Chinese chain restaurants is selected as the research object,which is the most vigorous in the Chinese restaurants industry.Modern chain restaurants management theory was introduced into China because western fast food entered the Chinese market in the late 1980s.After more than 20 years development,The Chinese chain restaurants still cannot compare with western fast food which is simple and can be replicated easily now because of food culture and manufacturing process, meanwhile,there is a considerable gap between their management concept and management level.From the surface analysis, the problem of development conditions of the Chinese chain restaurants is that the product is aging, lack of human resources, the brand construct is poor and so on,Yet on closer examination we will find its intrinsic reason is knowledge aging and lack of knowledge management.This thesis choose inductive approach and evolutionary approach base on organization, team and individual three levels and combined Chinese food culture, Chinese food manufacturing process, knowledge management and chain restaurants management theory and some cases, puts forward Chinese chain restaurants' knowledge management system and some suggestions to daily management. |
