The native varieties were used as experimental materials to select processing and special varieties according to ecology conditions in Hexi regions in Gansu and met requirement of processing enterprise. The content of nitrate of 28 introduced self-bred lines of processing sweet pepper was studied. The main experimental results were as follows:1. The new lines of processing sweet pepper 00-37 which met ecology conditions in Hexi regions and met requirement of processing enterprise was selected by systemic breeding. The mature period of the new lines was earlier advanced ten days than control group ("DAYEQIEMEN"), its yield increased 16.5% more than "XIAOYEQIEMEN", its average yield was 5084 kg/666.67m2, its fruit was lantern shape, green pepper was dark green and red pepper was purplish red .The vertical diameter was 8.3 cm, the transverse diameter was 9.5 cm, the fruit flesh thickness was 0.53—0.55 cm , the weight of single fruit was 130-140 g and the processing product yield was over 83%. Its processing quality reached requirement of processing enterprise and it was highly resistant to blight, tolerant to powdery mildew and virus disease. Demonstration area was 2000 mu.2. The new lines of 00-37 that had higher the general combining ability effect values on characters of single plant fruits numbers was used parents and easily prepared high-yield combination, its which had higher the general combining ability effect values on characters of pulp thickness corresponded parents that had higher the special combining ability to prepare higher processing quality combination, its which had higher the general combining ability effect values on characters of plant height was used parents and easily prepared fine plant type combinations.3. Nitrate content on different genotypes sweet pepper was continuous variation and nearly normal distribution. Cluster analysis was fallen into three categories. Based on the observations, nitrate content of different genotypes processing-sweet pepper might be controlled by multiple genes of quantitative characters.
