The unique structural feature ofβ-lactam antibiotics is the presence of the four-memberedβ-lactam ring.β-lactam antibiotics can be classified into several groups accroding to their structual characteristics and they have strong antibacterial function. Antibiotics of theβ-lactam are part of a wide variety of antimicrobial agents that are used in veterinary medicine to treat and prevent animal diseases. There are concerns aboutβ-lactam residues in food. The widespread and intense employment of antibiotics has led to an increasingly potential risk for human health mainly because of hypersensitivity of some individuals to the parent compound and their metabolites and increasing development of resistance against anbibiotics in certain pathogenic bacteria. So we should be strengthened in animal antibiotic residue detection and control, to ensure the health and safety of people's diet.Modern analytical technologies have been utilized in the qualitative and quantitative analysis ofβ-lactam antibiotics, such as high performance liquid chromatography (HPLC), high performance capillary electrophoresis (HPCE) and liquid chromatography-tandem mass spectrometry (HPLC-MS/MS), and their sensitivity and selectivity are higher. In order to minimize the antibiotics residues in food and cease its harm to human health, it is necessary to improve the traditional analytical methods and seek quickly and accurately monitoring method to make more accurate and reliable testing results. The thesis establish an easy to use and low time consuming solid-phase extraction-micellar electrokinetic chromatography or high performance liquid chromatography method which was developed and applied to the simultaneous determination ofβ-lactam antibiotics in spiked animal food samples.This paper included four parts:1. Introduce the structure, pharmacological functions ofβ-lactam antibiotics and the harm of long-term edibleβ-lactam antibiotics residues in food.2. reviewe the recent developments ofβ-lactam antibiotics residues analysis in animal food samples by modern analytical technologies, include the sample extraction. 3. establish the solid-phase extraction-micellar electrokinetic chromatography method which was developed and applied to the simultaneous determination of fourβ-lactam antibiotics in spiked milk samples. 4. establish the solid-phase extraction- high performance liquid chromatography method which was developed and applied to the simultaneous determination of fiveβ-lactam antibiotics in spiked pork and milk samples, and qualitative analyzed by mass spectrometry.
