The filament of the fruitbody .different from two colour and six areas,was obtained through the organization isolation of Lactarins deliciosus in this article. It was concluded that the contents of fatty acids, polysaccharides and mineral elements of the two different colour fruitbody are not same. After the component analysis and compared with other kinds of edible fungi, the nutrition position of L.deliciosus was defined. Furthermore, the international adopted nutrient value assessment method was applied to the overall assessment of the protein nutrient value of the L.deliciosus. The conclusion was drawn that the protein content of L.deliciosus is comparatively high, the trace elements humanbody needed are rich in fruitbody and mycelia of L.deliciosus, and it can be regarded as good source of useful elements , such as P, Ca, Zn, Ni. There are six kinds of fatty acid in the grey green pilius and mycelia. The content of setearic acid in fruitbody is high ,which is 56.10% of the total fatty acid . The poly-unsaturated fatty acid is 56.07% of the total fatty acid in the mycelia .higher than Rivinosa and peanut . The fruitbody of L.deliciosus has 17 kinds of amino acids, the total content of which in pileus and stipe is respectively 12.75% and 8.98%. The essential amino acid makes up 48.39% of the total amino acids.The first limit amino acid is met. CSAAS,EAAI,BV,NI,and SRCAA of which is respectively 77.6,64.9,98.6,95.8,23.2 and 74.19. It was proved that CS and SRCAA possess the first place, EAAI,BV and NI the second place, only AAS the third place. By comparison ,the nutrient value in pileus of L.deliciosus is a little higher than that of L.edodes, but higher by far than that of T.matsutoke Fhepatica,V.voluacea and A.aeherita. Polysaccharide production rate in mycelia is 9.36%,much higher than fruitbody too.The effect of carbon source , nitrogen source, minerals, vitamins, temperature, PH and orthogonal test on the mycelial growth was investigated. The results showed that the optimal medium composition was Dixtrin2.5%, Beef extract 2% , sucrose+mannitol 3%, MgSO4 0.1%, KT 1mg%, nicotinic acid + riboflavin (1.5+0.3)mg%, shaking frequency 130r/mim 50ml/150 (ml) is the optimum broth amount in flask and culture 25 days. Under such conditions ,the mycelia and polysaccharide obtained are 0.4497g and 0.675g in 100ml medium. On the base ,the further research had been made ,as a result,the optimum shaking-flask none nutrient conditions were inoculum size 20% ^ inoculum ages 15 days,cultural temperature 27?C,shaking time 8 h/d, PH value 7.0 of the medium is proper for polysaccharide production. Under the optimum conditions, culture 15 days ,the dry weight of mycilium was 324mg, polysaccharide production was 695mg in 100ml medium. In this article the nutritional and non-nutritional conditions was found to increase the mycelia growth and polysacchide production of Ldiliciosus through a large of experiments and researches from the nutritional physiology, which would be the base to exploit and utilize Ldeliciosus.
