At present, the beer industry is the pillar industry of food industry and the beer equipment manufacturing industry is entering a period of rapid development at the same time.The research object of this paper is beer pasteurization machine and it is beneficial to promote the improvement of beer process because of the importance of sterilization in beer process.The thermal analysis of pasteurization machine was conducted in this research at first.The temperature of spray water was calculated for each temperature zone according to the law of conservation of energy.The way of heat transfer in the working process of pasteurization machine was analyzed according to heat transfer theory.The model of heat transfer in the spray water and beer was set up and the total heat transfer coefficient formula of the heat transfer between the spray water and beer in each temperature zone was deducted and calculated.The heat transmissiosn between the spray water and beer was also calculated.Besides,the model of heat transfer in the wall of pasteurization machine and air was set up and the heat transmissiosn was calculated.Through the heat balance analysis,the spray water flow required in each temperature zone was calculated and the model of pipeline and pump was selected.To solve the problems of uneven outlet pressure and spray unevenly,the spray system of the machine was optimized and the centrifugal swirl nozzle spray pipe was designed and the installation way of nozzle was optimized.The CFD numerical model of sterilization process was set up and it relates spray water temperature,spray time and spray water flow together to establish a solid-liquid coupling complex conjugate heat transfer system.The bottled beer pasteurization process was simulated based on ANSYS Fluent software,and the temperature field of the beer distribution, heat transfer law,outlet temperature,PU values,and heat transfer in the process of heat flow are analyzed.The temperature of spray water in each temperature zone by theoretical calculation,water pumps,pipe size, and the optimized model of centrifugal swirl nozzle spray pipe was proved to meet the demands of the sterilization process by experiments and the pasteurization process numerical simulation results was consistent with the experimental results.This article innovation spot lies to Using the theory of heat transfer to analyze the pasteurization process and providing a theoretical basis for the establishment of the sterilization process parameters.A new type of spray tube was design to solve the existing problems.The pasteurization process was implemented by computer using the thermal analysis module of ANSYS Fluent.The CFD numerical model of the whole process of pasteurization process was got which will provide the basis in the pasteurization process improvement for researchers.
