The high level of cholesterol in serum is one of the main factors of cardiovasclar and cerebrovascular diseases which led high human mortality,raditional drug treatment is usually single role and have more side effects and it is the commonly used measures to regulate body cholesterol levels by reducing exogenous intake of cholesterol; probiotics can be achieved simply lower cholesterol without affecting absorption of other nutrients when it is in the regulation of intestinal and many other function,so it has generally been attach great importance to the related fields around the world;it has a vital role for ensuring biological effectiveness of probiotics,security,stability of quality and product development to screen,optimiz cholesterol-reducing probiotics and determine scientific methods of probiotics in vitro.The results of this research show that:1.43 probiotics were researched by ammonium ferric sulfate method and four candidate strains of high cholesterol removal rate were screened and they were DM84031(63.1%), DM84034(70.3%), DM8503(81.1%), DM86056(63.1%);the four candidate strains were determined Lactobacillus bulgaricus, Streptococcus thermophilus, Lactobacillus jensenii,Streptococcus faecium by physiological and biochemical identification.2. The candidate strains of DM86056 has the advantages of the relative stability of antibiotics to be further researched when the acid and bile salt tolerance, inhibitory capacity and biological characteristics of candidate strains were researched.3. Four strains of high cholesterol removal rate had a certain degree of adsorption and assimilation function when the biological effectiveness and absorption of cholesterol-reducing was confirmed and authenticated through the study of cholesterol metabolism and physiological characteristics of candidate strains.4. The tested strain of DM86056 has obvious effect on serum cholesterol levels and other tissue without liver tissue through the study of indexes(cholesterol content of serum, chest muscle, led muscle and liver tissue) of carnivorous fowls which were fed tested strain of DM86056(carnivorous fowls of control group and experimental group were 100 plume),so the development has a certain value.The results of the research show that:scientific methods of in vitro screening of probiotic could ensure their biological functions and probiotics should be studied including the cholesterol-lowering mechanism in order to meet the growth and metabolism and physiological characteristics of different species of probiotics for promoting the development of probiotics.
