| Food is a special kind of products, close related to human safety and health. The global public and international society has increasingly focused on food safety. However, in the practice of food international trading, the"non-tariff trade wall", which is related to food safety, is playing a more and more important role in recent years. HACCP, as an effective system for food production and management, holds a high status in food industry attribute to its advance detecting on controlling the potential hazards in food production. At present, HACCP management system has been recognized by many international organizations and widely used in food processing industry. All enterprises engaged in the high-risk food industry are asked to set up the HACCP system in world wide. Therefore, HACCP system has become to be the most authoritative food safety quality management system.HACCP is short for"Hazard Analysis and Critical Control Point", which means to recognize, evaluate and control the hazards obviously harmful to food safety. It's a convenient, reasonable and professional quality control system. Its main function is to ensure that any possible hazards or dangers which may happen during food production can be fully controlled under HACCP system, and finally prevent any problems to harm public health.This paper first makes some instructions on theory of HACCP system, then does detailed analysis and research on effect after performing HACCP system in two export food processing enterprises in DongGuan, GuangDong province, aiming at providing some useful reference and edification to the relevant food enterprises, and promoting HACCP's popularization and application in our country, further to improve our country's food safety situation, boost up trusts on our food industry and quality from consumers, finally, author gives some pieces of advice on how to construct and forward HACCP system in China, in order to better enter into and possess the international market in food industry. |
