| Objective: Study the local standard of donkey milk powder in Xinjiang,to satisfy the urgent need of the development of the donkey milk industry, better to support the right of the consumers and the enterprises. Methods: According to the examination method of the food hygiene in《the national standard of the People's Republic of China》, detect the pure content, the chemical composition, the healthy condition of the donkey milk powder ,etc. Test the content of the casein in the donkey milk by the method of the lsoelectric precipitation. According to the milk standard of the nation and the standard of the enterprise of the donkey milk, research the local standard of the donkey milk powder in Xinjiang, then on base of this formulate the standard of the flavoured donkey milk powder. Results: The sense characteristic of the donkey milk powder in Xinjiang: appearing the ivory or the white, having pure milk flavor and sweetness, dry and uniform powder, being quickly dissolved in the water through mixing, not agglomerating; the index sign of the physics and chemistry of the donkey milk powder: the average content of the protein was 19.68±3.19%, the fat was 9.98±2.03%, the lactose was 66.00±3.51%, the linoleic acid (LA)was account for 20.78±2.80% of fatty acids etal; The healthy index sign of the donkey milk powder was: the average content of lead in the donkey milk 0.015±0.097 mg/kg, the nitrate was 4.65±2.39 mg/kg, the vice nitrate was not checked out etc. According to the principle of studying the local standard of the donkey milk powder in Xinjiang, considering fairly the practical conditions of Xinjiang and the enterprise, formulate the local standard of the donkey milk. The standard had been put into practice in the first, 12, 2007, and its number was DB65/T2800-2007. Conclusion: The local standard of the donkey milk was the considered standard, and it was used in preferably ruling the companies, managing the markets and protecting the rights of the enterprises and the consumers. |
